Another Vegan With a Vengance recipe review

I made the Chickpea Broccoli casserole. I made it as is, except, contrary to her advice to make it just as is the first time, I added 1 teaspoon rosemary & 1 teaspoon thyme.
Like she says, it is bland, but not in a bad way. The flavors of the onions, carrots & broccoli really come through. Also, it is a very colorful casserole with the yellowish background of the garbanzo beans & bright flecks of orange & deep broccoli green.
I would definitely make this again, but I think I will spice it up a bit. I think 1 cup of Amy's Goddess dressing mixed in with the mashed garbanzo beans would be a really good addition.
Anyone else try this & what did you think?
I liked this recipe too. For some reason I was wanting to put green onions in it. But I agree that it could use a little something. I really liked the texture though.
Have you tried the breakfast stuff yet? I really like the tempeh bacon, the fronch toast, and the waffles. And I made the raspberry blondie bars last night and they are sooo good.

The tempeh bacon is next on my list & yes, probably the Fronch toast too. I even bought garbanzo bean flour so I'm ready to roll.
I think green onions in the casserole would be a good addition. My husband has already asked me to make this again! ;)
BTW, my garbanzo bean flour bag says that you can use it to make hummus. I see that garbanzo beans are the only ingredient so I may try it. I like my hummus really smooth.
I second the recommendation for the Fronch Toast--it's truly excellent! We've made it the last four Saturdays with the week-old stale bread.
Someone here (Nancy?)also recommended the sweet potato crepes which we made a few nights ago--also a great dish (although next time I'm going to use lite coconut milk because the sauce was a bit too rich for me with full fat).
I tried the corn fritters right after I got the book and they did not work for me. They tasted great but did not hold together at all. Anyone else tried these?

I adore the sweet potato crepes! For breakfast stuff, we've made (and devoured) pumpkin waffles, lemon-corn waffles, oatmeal-banana waffles, tempeh sausage crumbles, and breakfast veggie chorizo (which we made alongside scrambled tofu, and ate wrapped up in corn tortillas...quite yummy). Next up: the Fronch Toast. I'm really still he'sitant to make the biscuits...any biscuits, because I truly stink at making them.
I'm expecting VWAV to plunk itself down into my mailbox today. I'll definitely have to try that tempeh bacon and those sweet potato crepes.
Hahah, my boyfriend who eats fish and dairy, made a face when I mentioned I had ordered the book. By the time I read the entire table of contents to him, he was drooling! I can't wait!!! I haven't been this excited about a cookbook in forever!
