I recently got the downloadable version of Claire Gosse's cookbook from her website and LOVE it!! So far I have made the chocolate cupcakes, vanilla cupcakes, and the pineapple upside down cake. All have been incredibly delicious and VERY easy to make. My omni hubby has requested the chocolate cupcakes for his upcoming birthday!!  :)>>>

Chocolate cupcakes: These are just delicious!! They are even awesome without frosting. They are moist and chocolatey goodness. This will be my go to cupcake recipe from now on. They go together really quick too.

Vanilla cupcakes: I was surprised by how much I enjoyed these as I usually don't care for homemade white or yellow cakes. These were very nice and tasted even better after sitting for a day.

The pineapple upside down cake requires a springform pan. I decided to cut the recipe in half and use an 8" round. I baked it for about 23-25 minutes. It came out awesome!!

Oh, and the cupcakes freeze very well too. :)
