I hear you! I've also been looking for healthy recipes that aren't hard to make. I haven't read those books, but if you go to amazon several people have reviewed them:
I have all 3 of those cookbooks, but have only made recipes out of "Vegan Vittles." So far, with one exception (oatmeal choc chip cookies), everything has turned out great. The Onion Lovers' Chip Dip is really good to bring to gatherings...everyone loves it. I've also made the seitan "Gyros" which are also really good.

Simply Vegan is one of the oldest cookbooks I have in my collection. I dusted it off and had a look see. My copy is from 1991. It lives up to it's name in that the recipes are quick and easy. Tasty too. Great book for the start-up vegan cook. Besides recipes there's several chapters with information for the new vegan.
I have Vegan Vittles and Nonas Italian Kitchen and both are great. They are two of the healthiest vegan cookbooks I have. (Quintess's Radiant Health Inner Wealth is also very health focused.) Vegan Vittles is really great, it has brekfast, lunch, dinner, dessert options and some of the author's famous "uncheese" recipes like the ones from her other cookbook, 'The Uncheese Cookbook." She is very focused on healthy recipes and even within her dessert chapter the frostings use ingedients like tofu and do no rely on tons of powdered sugar. Her Crock Cheese is amazing and so are the pancakes. If you would like a ranking to decide which one to get Vegan Vittles would be the top one for me. Bryanna's Nonnas Italian Kitchen also refects her commitment to healthful cooking. It is very allergy friendly and keeps a low-fat focus on many recipes. It is definetly geared towards its theme of Italian food, so its not as well-rounded of a basic cookbook as vegan vittles, but its still great. Her mayo recipe is awesome.
