The Garden of Vegan

I've been stepping away from veganomicon lately and trying some new recipes out of old favorite cookbooks, especially the garden of vegan!!  we had the zucchini with tomatoes and marajoram last night.  it was awesome.  really really super simple.  it only took about 15 minutes.

one thing that i dont like about this book is that a lot of recipes calls for vegan worcestershire sauce which i just cant find.  hmph.  anyone have a good substitute that can be found in most stores?

oh awesome thanks!!!  the recipie that tgov give uses some weird ingredients that i just cant find here, but i have all the ingredients for this recipe already!! sweet!

I bought this book last year exclusively based on this recommendation but I've yet to make that quinoa recipe.

The blueberry muffin recipe is good though.

Tonight for a change of pace I made the Portobello Mushroom Bake.  I had been eyeing that recipe for some time and it always sounded a bit odd but it turned out delicious. The ground almonds make for a very substantial, almost creamy sauce.  I am not a bragg's fan so I cut it back to 1 tbl and subbed 2 tbl tamari and used the maximum amount of water.  The only changes I might make next time would be to cut back slightly on the rosemary and balsamic vinegar.

Theres a recipe in the back for worch sauce. (i've never tried it though) They do sell powedered worch. in many spice stores, if theres one around you check it out, lots of them are vegan!
Its sad, i bought this book but have only made a couple very simple things. that'll have to change.

I've been craving study snacks, so yesterday I flipped through this book to see what sweet things I could make that I already had ingredients for. I went with the sugar cookies (mama b's I think?) and used mini cookie-cutters. They turned out tasty! Not quite the shortbread texture I had hoped for, but I suppose it's called sugar cookies instead of shortbread for a reason. I made some icing for them as well. tasty and easy

I haven't made too much from this cookbook, but so far everything that I've tried has been great:
Hayley & Ian's Peanut Butter Pasta- This sounds kind of gross, but it's amazing! I like to add a little extra cayenne.
Tofu Chimichangas- Non deep fried chimichanga. I like the texture of Lightlife ck'n strips instead of the tofu, and I omit the beans, olives and Bragg's, and add Rotel. When they are out of the oven, I throw some Tofutti sour cream on top. Delicious!
Lemon Poppyseed Cake w/ Cream Cheese Frosting-OMG, soooo good.

Hayley & Ian's Peanut Butter Pasta --- this is really great, I made it years ago and remember how delicious it was. (I even followed the recipe!)
Dill Pickle Chip Dip --- This is just right with only a tsp. of sweetener and I like to add a bit of cayenne.
Garam Masala --- Super tasty and easy, make it all the time. Nice mixture of spices without being spicy.
Sarah & Tanya's You Must Make This Dressing --- Seriously... make this!!!
Curried Vegetable Pie with Chickpea Crust --- amazing. I've made it a lot over the years. I found it works best to prebake the bottom crust for a few minutes. Now that I am wheat free I decided to modify the crust. I followed the basic measurements, the subs I made were:
1 of the tbsp. of water I put ACV
2/3 of the flour brown rice
1/3 tapioca starch
oil instead of shortening
more cumin.
The crust turned out better than it ever had! The filling is yum just as it is. I will make it again soon.

Wild Mushroom Soup with Thyme: This is really yummy. Simple and fast to whip up when it's cold out. I think next time I'll keep it a little chunkier.
Tanya's Curried Squash Soup: I adore this soup. I halved the batch, added an extra cup or so of butternut squash and replaced the potato with a sweet potato. Love love love it.
No-Cook All Purpose Tomato Sauce: This is a good recipe to have on hand when you don't have any store bought and your are too lazy to make stove-top. It's really good. I have it on pizza quite often.
Coffee Break Muffins: These are freaking huge. Just a little too much for my liking. Won't make again.
Brownie Cookies: I've never made these successfully. It's like a liquid batter, there is no possible way to scoop it out like a cookie. I end up baking it in an 8x8. Then it's good :)
