Help! Vegan wannabe overwhelmed with cookbook choices!

Hi y’all, I’m new here and am trying to decide on a few cookbooks, but am so overwhelmed with the choices and all the great reviews I can’t make a decision.

I will probably start with 2 cookbooks (I don’t have any; vegan ones that is, I probably have 75 others, or more actually; I love cookbooks).  The local library (that closes at 5 pm by the way), does not have any vegan cookbooks at all; actually I have more cookbooks than they do.

Anyway, I need one for beginners that has an introduction and explains things to me, (like seitan and tempeh, I don’t know what these are, much less how to cook them).  I need meals that are quick to prepare with easy to find ingredients (although on a weekend I wouldn’t mind spending a little extra time in the kitchen if the payoff would be worth it).  My meat & tater-lovin husband and two teenage boys might try them, but I will have to fix meat for them in addition, but I would love to be able to find great-tasting vegan food that they could enjoy also and maybe they wouldn't make fun of me.  I live in a rural area of East Texas, we don’t have a Whole Foods or a Trader Joes or anything like that.  And I would also like one that includes nutritional information for the recipes as I still have 21 pounds to lose and I want to make sure I am staying within my calorie range.

So far I’ve narrowed it down to:

500 Vegan Recipes
Veganomicon
How It All Vegan 10th Anniversary edition
Vegan Planet

Supermarket Vegan
Vegan on the Cheap
The Everything Vegan Cookbook
Vegan With a Vengenance
Eat, Drink and Be Vegan

Any suggestions, comments and information y’all could provide will be greatly appreciated!
Thanks so much!
Stacy

Thanks so much for enjoying my recipes, lovelies!

And yes, I was wondering if anyone would start a review thread for TWWS! :)

Do you have a list of all the recipes from TWWs, Tess?
Then it would be so easy to make a new thread. :)

Sure, I can cut & paste them from my file. Do you want me to send you a word document or just paste them as a reply here? Thanks!

Man. I should start asking authors for lists.

Yay, I was wondering when AC would jump in! Are you on this? Can I send you a cut n paste? :)
And yes, I thought of you w/ this - sure would be easier for you w/ all the cookbook lists you make!

Let's see, the Triathlon Tostadas are AWESOME!  Love Tess' Happy Salad (simple and quick and love the artichokes!), the Cranberry Lime Confetti Quninoa is yummy and I can make the kids' choice guacamole by memory now.  Oh, and the Ful Mudhamas were surprisingly good!  And the Mediterraen Chickpea Salad is DELISH also!  I just love chickpeas!

When there is a separate thread for this book and I have the time, I will sit down and write a proper sentence for all the dishes I've made, but these Really stand out as favorites for me!

I have added all your reviews that I saw. Some of them might be in RHIW because I added those before.
