Mini cookbook challenge

I'm going to try to work my way through more Isa/Terry recipes. They are all my favorite cookbooks, but I get caught up in other things. I'm going to start mainly with more things from Vcon and VWAV. Anyone else want to participate? I know some of you have already made like everything in them. I never really follow recipes exactly, but I want to make more of these things. I want to try to do..2? recipes a week. Isa and/or Terry books only!
Isa's new book, Appetite for Reduction is coming out around December, I believe. I've tested a lot of the recipes, and it's going to be good!

I took inspiration from Erin!

Coconut rice with toasted coconut (VWAV)

I used brown rice. It looked delicious, but was slightly disappointing. I think it was my first time cooking with a cinnamon stick, and 1. it fell apart, so I had to pick the pieces out 2. I thought the flavor in the rice was a bit odd. I liked the rice ok, and loved the toasted coconut, but would do without the cinnamon. I would probably add more zest next time, too. I didn't have any problems with cooking, or sticking (but didn't do the 20/10 thing, since I had brown rice).

Braised cauliflower with three seed sauce (VWAV)

Delicious. I'm always looking for more ways to make cauliflower, and have planned to make this recipe several times. I guess I ran out of mustard seeds previously, so I used some mustard powder, and subbed coriander seeds. I used 3 peppers with seeds, but couldn't sense any heat! Good, and quick. Seems like a Tweety type of dish. ; )

really?  For some reason that surprises me!  I have slow cooked curries and things for a million hours with cinnamon sticks in them and they haven't crumbled/fallen apart at all, so don't think that's a normal thing and get put off using them!  Maybe yours was old/something?
Happy the cauliflower was awesome though, I'm seeing that coming up in our menu very sooooon! : )

Well, at least the first time I've purchased them. I've maybe cooked with one at my parent's house? It was definitely an inferior stick. It was pretty cheap, so I'm not holding it against the sticks! I just didn't like the flavor so much in the rice.

Made the Potato-edamame samosas from VWAV last night, they are great!!!! I omitted the ginger, added garahm masala, a little EB, and curry powder, and grated the carrots so they would cook faster....I made the bigger shapes.  The best samosas I have ever made!! Just the right amount of spice and crispyness, bringing some to work today too!

I didn't make the cocnut-mint chutney, but ate them dipped in a combo of shoyu, veganaise, and hot sauce, (I'm a weirdo :)  )

Smokey grilled tempeh - VCon - did a double take when I saw she calls for two tbs of liquid smoke.  That seemed like a lot, but I went for it.  This was quite tasty.  I broiled them and my issue was she said to pour the marinade over the tempeh the marinade surrounding the tempeh burned to the point it set my smoke alarm off when I wasn't looking.  The tempeh itself was fine, just the surrounding marinade burned.  This was very irritating.  But it might be my fault for setting it on high and on the 2nd rack. 

Cajun baked fried (VV) - I've made these a couple of times and probably have reviewed them already.  These are my favorite fries of all time.  Love love love them.

Arepas (VV)

I really enjoyed the flavor of these, and I made a couple that were really good, but I need more practice with the forming/cooking method. The dough is super simple to make (I used the PAN that fb sent me!), but I guess I ended up making them in between the Venezuelan and Columbian methods. I didn't want to do the baking part, but still made them a bit too thick. I couldn't use them to stuff anything inside, but they tasted good as a bread. Definitely definitely use the cast iron. I'm always timid to use my skillet, because I don't like the seasoning on it, but mine didn't stick at all, and it it does leave the nice crust. I tried a couple in a different skillet to quicken the process, but they didn't get done at all on the outside. I will make these again.

Falafel (VWAV)

I was so excited to make this, and wanted to be able to use the arepas as type of pita, but that didn't work out.. I was super disappointed with my falafel when it was cooking. I should have just baked them, but wanted to make following the recipe. I used some cilantro instead of parsley. I thought the mixture was too dry after pulsing a while, so I added a tiny bit of water, and it might have still been too much. My mixture was too smooshy, and just fell apart in the pan. It was quite disastrous. I ended up trying to fry them, then just plopping the whole thing onto a baking sheet and baking. The flavor was good, and they were edible, but very disappointed.

Banana wheat germ muffins (Vcon)

Good! I used an extra banana, and applesauce for the oil. Because of the extra banana, I filled my cups to the top, and baked the additional five minutes. Even though the tops were browned, I should have baked a bit more because they are slightly underdone inside. Good flavor, though. Easy to make, nice rise. I recommend using applesauce.

Looks good, AC!

We had the Chili Sin Carne Al Mole (VWAV) for dinner tonight with the skillet cornbread from VCON. I was so excited to make the chili, and it was even better than I had imagined! I only made half of a batch and subbed portobello mushrooms for the seitan. I love this whole mole thing, I've been drying to try it forever. My whole half batch got eaten up!

The cornbread was good to. Right up there with the recipe from La Dolce Vegan.

Bean balls (Vcon)
hmm, not as good as I expected or hoped.  I followed the recipe exactly (minus lemon zest) and thought it seemed to mushy, but carried on a I wanted to see what the recipe was like as written.  I made 20 little bean balls out of the mixture as the recipe said that smaller was better and they looked like a good size.  I baked them and they seemed to be fine.....until I started eating them.  They really were too mushy for my tastes, and they lacked flavour.  The outside crispy bits were really good, but the rest were meh.  Disappointed and not sure I'd make again, or it I did there'd be major tweaking

sehlloid...I know what you mean about the mushy balls....mine fell apart in the sauce when stirring.  As you might know I haven't had much success with balls.

Tempeh Pastry Puffs - Wow - it really tastes like sausage!  So weird!  I could have done without the puff pastry, but the sausage was delicious!  I'll definitely use it for other things!  We drizzled them with a little maple syrup - yum!

Jalapeno Garlic Grits - Oddly familiar, even though I've never had grits before....I made mine thick and it was pretty good - very much like polenta.  Andy thought it was too much garlic, but I thought it was just the right amount, but I love garlic.....

Tonight's dinner was an italian style prepared baked tofu, mixed greens with roasted figs that were tossed in balsamic vinegar and Herb Scalloped Potatoes from Veganomicon. We felt very decadent. '

So Herb Scalloped Potatoes: I have a mixed review. They use alot of spice and nutritional yeast on the top layer of potato, which didn't really mix with any of the other layers of potato, so you had a very crunchy, delicious, herby, spicy top layer folled by some very mildly flavored lower layers of potatoes. But that wasn't necessarily bad. The other thing I noticed is that it's not a very creamy scalloped potato dish like the one my mom used to make that uses some very creamy, very non-vegan ingredients. It was more like a tasty broth. I think this might get better as it sits. Still, this dish was by no means a dissapointment and I think with a few tweaks I might make it again.

For tonight:

Green pea and lemon risotto with roasted red peppers (Vcon)

We really enjoyed it! I didn't measure the lemon, and added maybe a tiny bit too much, but I really like the overall flavor. I cheated and used jarred roasted red peppers. Risotto is not my favorite thing to make, but this would be great for a holiday dish (red, green, and white...).  It's the best vegan risotto I've made.

Smoky shiitakes (VB)

Delicious. This is possibly my first time having shiitakes (thanks to fb). Mine were dried, so I just rehydrated them in the broth for the risotto. I had way less than the given amount, but probably added the same amounts of liquids. Great flavor, great texture. A nice little smoky side dish.

I forgot to come in here and say we had the VWAV Jerk Seitan on Friday night .
I followed the directions for the marinade and used it with some pressed tofu and misc veges on rice.  I don't really know what I was expecting, but maybe something with a little more pop than this?  It was tasty enough, but I would have to play with the seasonings I think if I made it again.

Have been slack with cookbook recipes since then : /

don't have white beans or tempeh... or asparagus!
I should remember to cook some white beans, I keep seeing things that use them.  Tempeh I'll probably never have though, and I don't usually like asparagus but would be prepared to try....

butternut soup will probably be the winner though! : )
