Mini cookbook challenge

I'm going to try to work my way through more Isa/Terry recipes. They are all my favorite cookbooks, but I get caught up in other things. I'm going to start mainly with more things from Vcon and VWAV. Anyone else want to participate? I know some of you have already made like everything in them. I never really follow recipes exactly, but I want to make more of these things. I want to try to do..2? recipes a week. Isa and/or Terry books only!
Isa's new book, Appetite for Reduction is coming out around December, I believe. I've tested a lot of the recipes, and it's going to be good!

I made half a recipe of VCON's "A Hummus Recipe" and thought it came out fabulous! VWAV this coming week!

Colombian Grilled Arepas with Corn and Cheese (VV) - so I was probably doomed from the start since I used Mexican masa flour instead of Columbian or Venezualen, but that's all I could find....I cooked them on our big griddle and they took forever - and this was the thinner version!  I wasn't impressed, so I don't know if it was the flours fault or what...

Black Beans in Adobo Sauce (VCON) - very good!  I love anything chipotle, so this was right up my alley.  I halved the recipe, but added the full amount of salt by accident...so they were salty, but good!

Cubano Vegano Sandwich (VV) - this was pretty delicious - not amazing like I had hoped, but definitely a good sandwich....I used a foccacia style bread and sweet pickles, onions and peppers that Andy's grandma pickled for us - that was the best part!  And used daiya instead of sliced cheese.

Roasted Butternut Squash (VB) - Fantastic!  I've never had butternut squash before, but of all the things I planted in the spring, it's the only thing that survived the bunnies, so I decided to try this....a bit too much oil for my tastes, but the squash was delicious!  I'm going to make some more tonight, but with less oil and more seasonings.

Steamed White Seitan (VV) - tastes like seitan....I made 2 big loaves instead of 4 and steamed for 45 minutes - this was firmer than the red seitan, and I almost think I liked it better....

Mojo Oven Roasted Seitan (VV) - I liked this marinade....wasn't overpowering, but made the seitan nice and juicy....but I think I'd cook it a bit longer next time, or use a higher heat....

well u better get cookin! i'm still eating VV leftovers, I made the potato chickpea enchiladas again last night <3 i have all the ingredients on hand though for some VWAV recipes!

Me too...last night it was a veggie burger and baked potato, been that way for a stretch of days.  I'm rising to the occasion and cooked tonight.

Sauteed Collards (VCON)  - These were delicious! It was my first time preparing collards at all, and I'll definately be making these again sometime soon.
Black Bean Burgers (VCON) - My first homemade veggie burger! I loved these. I made them slider sized with the Baking Powder Biscuits from VWAV as buns. Very tasty.
Vanilla and chocolate Marbled Cupcakes (VCTOTW) - Very good. I made them as an 8x8 cake instead of cupcakes.
Classic Cabbage Salad w/ cilantro citrus dressing  (VV)- I actually made this a few weeks ago but forgot to review it...I loved it and so did the fam. I liked the lime in the dressing. It's different :)
Seitan Chorizo Sausages (VV) - Very good! I may like these even more than the chorizo from VB.
Whole Wheat Flour Tortillas (VV) - A good homemade tortilla. I did them without chia seeds (didn't have any) but I will definatly be making these again. Very easy and good.

I have a couple more marked from all these books, then I have a few marked from 500 vegan recipes. I've only made a couple of things from it, so I think I'll work from there now. ...even though I didn't see too many things when I looked through it this morning.

can I review stuff if I didn't make it?  Probably not fair to, but oww's food was all delicious.  I really enjoyed the VV chorizo.  And the cinnamon rolls from VB were excellent - N even said they looked better than shop bought.

I had big fail with these.  I would like to blame my oven, but I think I just do not have any luck with cinnamon rolls - this is the second recipe I've botched.  The dough isn't great and I think I must have cooked them for longer than I should have done, because they are harder than I'd like.
I know the recipe is good though coz I had oww's cinnamon rolls and they are excellent.  I think I'm just a bad cook (with these)

Moving on to 500 VR and AVK sounds good to me. Oddly enough I've been earmarking for those the past few days, so it actually sounds great to do those two!

VWAV Black Bean, Mushroom, and Quinoa- Stuffed Peppers:

These peppers were freakin fantastic! I used 5 medium peppers instead of 4 big ones and I will be making them again next week! So simple and yummy and I love incorporating quinoa in dishes since it's so good for you. A def must try!

VWAV's Chipotle, Corn, and Black Bean Stew:

This recipe was pretty good but a bit too tomato-y for my tastes. I sauted the onions in veggie broth instead of oil to have a fat free dish :) I also added an extra cup of water though I probably shouldn't have. I think it would be more yummy and stew like if I added more carrots (so good) and a whole can of corn instead of a cup. My bro and friend really liked this though.

I started with 500 VR.

Veggie fried rice

I'm always disappointed in my fried rice. It's never how I want it to be, and this was no exception. I thought maybe the simplicity might be the way to go, but eh. I didn't use the corn or optional tofu, and had cold brown rice. I think the fennel is strange in this. Nothing special, won't make again.

Tempeh in onion marinade

I don't think this would be great as is, but I liked how mine turned out. I can't imagine using a whole large onion for this, but I used about 1/2. I used fresh jalapenos, some BBQ sauce, and agave. I loved the BBQ sauce addition, and liked the final result. I think it was P's favorite tempeh, ever. He's never been a big fan, but liked this. I pan fried it.

I have one more from VCON, two from AVK, and a few old ones from 500 VR:

Chickpea Cutlets (VCON) - These were so good! I baked them instead of panfrying them. I will definately be making these again soon.

Chocolate Chip Quick Cake (AVK) - Very good. Especially with coffee, since it isn't really sweet. It reminds me of like a chocolate chip shortbread or biscuit.

Spiced Chocolate Pudding Cake (AVK) - Yum! I made this sans the spices (I'm the only person in my household that likes the comnbo of chocolate and spices...) and made a little less of the pudding part than called for (as per fb's suggestions). It was so delicious.

White Pizza (500 VR) - Amazingly delicious. It's my new favourite pizza. Ever.
Béchamel (500 VR) - Very easy to whip up and very delicious. I had it on the white pizza and used leftover for dipping steamed veggies in.

Red "Meaty" Lasagna (500 VR) - Insanely good. It's kind of your basic tofu ricotta- red sauce lasagna, but I loved it.

Basic Seitan Crumbles (500 VR) - I make these all the time. I usually put them in homemade marinara sauce. Quick, easy and yummy.

Independence Day Wieners (500 VR) - Good. I'm not sure if I'll make these often (so much oil!) but they taste good. Definitely an indulgence!

It may sound shocking but I have neither of those cookbooks and will await the next mini-challenge.  However, I'll read with interest as they are on my "wish list" at Amazon.  :)

P wanted cookies, so I made the orange cappuccino cookies from 500. I subbed agave for the 1/4 cup of maple syrup, but otherwise followed the recipe. Well, I can't remember what flour is used, but I had AP. I did have to add about another tablespoon of milk to make a good dough. I was not expecting to love these, because I wasn't pleased with other agave cookies, but these are great! There's no coffee flavor, which seems to be the case with most espresso recipes (only 2 teaspoons used), but the orange flavor is good (not too strong), and the texture was fabulous. They were an exceptional kind of chewy, with a bit of crunch. I think the 14 minutes baking is perfect, and I did get 12 cookies. I would add less than 2/3 cup chocolate chips/chunks, because I could barely get 1/2 cup incorporated. P loved them, as well. I think the whisking in of the raw sugar to dry ingredients (as opposed to with wet) helps with the nice texture.

I'm sad your oven didn't provide you with tasty cinnamony sticky goodness!  I love this recipe!

The only other thing I've made from one of these books recently is the Raised Waffles from Vegan Brunch, which we had with Shell and N in Wellington last week.
I don't know if it was because I let the cooked waffles sit for too long, or what, but they weren't crunchy at all on the outside, and I really don't know that I thought they were any fluffier or whatever they're supposed to be for the raising.  I mean, we had time, so it wasn't a hassle, but when there are so many good recipes you can whip up and cook straight away, I probably won't come back to this one again.

I completely forgot that I also made the Gingerbread Waffles from Vegan Brunch on Saturday.
I'm not actually a massive fan things that taste too much of ginger or molasses on their own but we thought these were wonderful!  Nice strong flavour, and they were a perfect texture.  Will definitely make again.
