Mini cookbook challenge
I'm going to try to work my way through more Isa/Terry recipes. They are all my favorite cookbooks, but I get caught up in other things. I'm going to start mainly with more things from Vcon and VWAV. Anyone else want to participate? I know some of you have already made like everything in them. I never really follow recipes exactly, but I want to make more of these things. I want to try to do..2? recipes a week. Isa and/or Terry books only!
Isa's new book, Appetite for Reduction is coming out around December, I believe. I've tested a lot of the recipes, and it's going to be good!
so I made the Chickpea Spinach Curry ... except with no spinach. oops. I guess after having lots of greens the night before I just wanted to mix it up with the veges so I used a mix of carrot, zucchini and broccoli instead of spinach. Because those don't reduce down as much as spinach does, I ended up adding another tin of tomatoes to keep in saucy. I don't have any asofoetida but otherwise followed the recipe. We really enjoyed it, quick and easy to put together, strong in flavour, and a little different from a lot of the curries I usually make. Would make again.
for AC: mr oww asked if there was seitan in it when I served it up. I told him to shush and eat his chickpeas. : )
Steamed Red Seitan (VV) - good, a tad bit on the soft side - very similar to the chorizo sausages, just less spicy....I halved the recipe, thinking it was going to make a ton and it really didn't - next time I'll make the full batch.
Punk Rock Chickpea Gravy (VWAV) - not as amazing as I thought it would be....I mean, I liked it just fine, but I wouldn't rave about it....I tasted the nut yeast a lot more than I would have liked - but it was still good - and made a ton! I have a jar full of it in my fridge and don't know what to do with it...
Braised Brazilian Shredded Kale (VV) - pretty standard kale...I was hoping for something special with the liquid smoke, but I never really taste it in anything I use it in....
Chesapeake Tempeh Cakes (VB) - AWESOME! totally loved them....I'm so not good at frying things, but these turned out pretty good - a little burny, but not bad...the flavor was great....but I didn't use the nori since I didn't have any...the roumalade was delicious too!
damn it AC! i just cracked open VWAV and Vcon and want to participate! Sorry I have been so obsessed with VV and haven't been posting on this specific forum.
and damnit Erin! I wanted to make that gravy... well at least I have been warned :) what was it missing?

I made half a recipe of VCON's "A Hummus Recipe" and thought it came out fabulous! VWAV this coming week!
Colombian Grilled Arepas with Corn and Cheese (VV) - so I was probably doomed from the start since I used Mexican masa flour instead of Columbian or Venezualen, but that's all I could find....I cooked them on our big griddle and they took forever - and this was the thinner version! I wasn't impressed, so I don't know if it was the flours fault or what...
Black Beans in Adobo Sauce (VCON) - very good! I love anything chipotle, so this was right up my alley. I halved the recipe, but added the full amount of salt by accident...so they were salty, but good!
Cubano Vegano Sandwich (VV) - this was pretty delicious - not amazing like I had hoped, but definitely a good sandwich....I used a foccacia style bread and sweet pickles, onions and peppers that Andy's grandma pickled for us - that was the best part! And used daiya instead of sliced cheese.
Roasted Butternut Squash (VB) - Fantastic! I've never had butternut squash before, but of all the things I planted in the spring, it's the only thing that survived the bunnies, so I decided to try this....a bit too much oil for my tastes, but the squash was delicious! I'm going to make some more tonight, but with less oil and more seasonings.
Steamed White Seitan (VV) - tastes like seitan....I made 2 big loaves instead of 4 and steamed for 45 minutes - this was firmer than the red seitan, and I almost think I liked it better....
Mojo Oven Roasted Seitan (VV) - I liked this marinade....wasn't overpowering, but made the seitan nice and juicy....but I think I'd cook it a bit longer next time, or use a higher heat....

well u better get cookin! i'm still eating VV leftovers, I made the potato chickpea enchiladas again last night <3 i have all the ingredients on hand though for some VWAV recipes!
Hmm...kind of in a cooking rut since I'm low on time and low on funds. I want to make dinner for my boyfriend and I, and I'd like to try a VCON recipe. He'll try anything once but doesn't eat mushrooms, peppers, raw onion, anything very spicy--the fun stuff!
I'll be perusing my cookbook tonight but if anyone has a suggestion I might just go with that because I'm feeling sorta laaaazzzzyyyy. >:D

Me too...last night it was a veggie burger and baked potato, been that way for a stretch of days. I'm rising to the occasion and cooked tonight.
Sauteed Collards (VCON) - These were delicious! It was my first time preparing collards at all, and I'll definately be making these again sometime soon.
Black Bean Burgers (VCON) - My first homemade veggie burger! I loved these. I made them slider sized with the Baking Powder Biscuits from VWAV as buns. Very tasty.
Vanilla and chocolate Marbled Cupcakes (VCTOTW) - Very good. I made them as an 8x8 cake instead of cupcakes.
Classic Cabbage Salad w/ cilantro citrus dressing (VV)- I actually made this a few weeks ago but forgot to review it...I loved it and so did the fam. I liked the lime in the dressing. It's different :)
Seitan Chorizo Sausages (VV) - Very good! I may like these even more than the chorizo from VB.
Whole Wheat Flour Tortillas (VV) - A good homemade tortilla. I did them without chia seeds (didn't have any) but I will definatly be making these again. Very easy and good.
can I review stuff if I didn't make it? Probably not fair to, but oww's food was all delicious. I really enjoyed the VV chorizo. And the cinnamon rolls from VB were excellent - N even said they looked better than shop bought.
Cinnamon rolls (VB)
I had big fail with these. I would like to blame my oven, but I think I just do not have any luck with cinnamon rolls - this is the second recipe I've botched. The dough isn't great and I think I must have cooked them for longer than I should have done, because they are harder than I'd like.
I know the recipe is good though coz I had oww's cinnamon rolls and they are excellent. I think I'm just a bad cook (with these)
Spaghetti and Beanballs
Minus the spaghetti. I made these and served them with the Marinara Sauce and Daiya Mozzarella on Frenchbread, with a side of sauteed spinach. I really enjoyed the flavor of the bean balls, but for a sub I wish they were a little less mushable. Still good though and I probably will make these again sometime. The sauce was delicous and super easy.
I'm sure oww will come in with reviews, and I'll add hers too! :)
Here are my ideas for the next few daysish:
veggie fried rice (500 VR)
seitan chorizo crumbles (500 VR)
sesame garlic kale (500 VR)
vietnamese seitan baguette (Vcon...been wanting to make this forever)
seitan lite (thanks to fb, AVK)
sandwich bread (AVK)
mashed potatoes and gravy (AVK)
So, I think I'll be moving on to using 500 VR and maybe some AVK next. Everyone still doing Isa books, or want to do something different?
Moving on to 500 VR and AVK sounds good to me. Oddly enough I've been earmarking for those the past few days, so it actually sounds great to do those two!
VWAV Black Bean, Mushroom, and Quinoa- Stuffed Peppers:
These peppers were freakin fantastic! I used 5 medium peppers instead of 4 big ones and I will be making them again next week! So simple and yummy and I love incorporating quinoa in dishes since it's so good for you. A def must try!
VWAV's Chipotle, Corn, and Black Bean Stew:
This recipe was pretty good but a bit too tomato-y for my tastes. I sauted the onions in veggie broth instead of oil to have a fat free dish :) I also added an extra cup of water though I probably shouldn't have. I think it would be more yummy and stew like if I added more carrots (so good) and a whole can of corn instead of a cup. My bro and friend really liked this though.
