These were good tasting, but the first pita I'd ever made.  I had some technical problems (including that it didn't make nearly as many as promised) which may have been my problems since I didn't have the pita making skills down yet; also, in a cool kitchen, these might have done better with another hour or so rising (or a rising in a slightly warmer kitchen). Mock Duck or Seitan: The directions call for forming the dough into two slabs, but they took forever to cook in my slow cooker. I kept cutting them in half to check for doneness and in the end I had quartered each of the loaves to get them to finish cooking already. The ingredient list sounded more exotic than most (toasted sesame oil, dark miso, etc.) but in the end it was just regular old seitan, and not a particularly flavorful one, either.

Tibetan Beef Fried Noodles: This is good and my family liked it. The combination of garam masala and curry powder gives it a nice flavor, but I still felt it was missing something. Not sure if it was because I omitted the onions, but there was definitely a flavor dimension missing. But it was good and i would make it again. Don't skip the Sriraja.

Middle Eastern Couc cous with Mint, Date and Almonds: I was in a hurry and did not check out the reviews first. Unlike Tweety, I added all the agave and I think it made it too sweet. My bunch of mint had spoiled so I didn't have the entire amount she called for, and I think it was still too minty. The flavors improved after it sat for a bit and came together. However, my family didn't like it at all and even though I ate half the bowl I probably won't make it again.

Vietnamese Noodle Salad with Lemon Grass Seitan, Sprouts, and Basil --

How could this fail to be a slam-dunk? Grinding the lemongrass and garlic to make a paste to marinate the seitan were enough of a pain that I thought surely it would be fantastic. But the end result was an off-putting combination of very lemongrassy seitan over blandly dressed rice noodles. i thought it was just okay, my kids hated it and even my husband only ate half his serving later that night before making a PB&J.
