 Happy Birthday Cake--

 

I made this for my daughter's birthday.  The cake was moist and sweet, with a heavy muffiny texture.  It uses a lot of vinegar and it gave an interesting taste which half of my family did not like, although I think the cake has gotten better after a day or two.  Plain vanilla cake is the holy grail of vegan baking and I will have to keep looking for the ultimate recipe.

The chocolate frosting, however, was a major disappointment.  All shortening bases for frosting are often heavy and have a greasy mouth feel and this was no exception.  The semisweet chocolate was not chocolate-y enough although I  used good quality chocolate.  I had to add spoonfuls of cocoa powder to boost the chocolate flavor.  She also suggests that if you want pink icing, just leave out the chocolate, but in that case the frosting is quite flavorless.

It wasn't terrible and we are continuing to eat it but I had high hopes and was therefore a little disappointed.

I have made the LA Style Chimchurri tacos three times since I bought the cookbook. The non-vegan boyfriend adores them, he literally licked his plate last time. These aren't easy to do on a weeknight, but chimichurri tacos are now my go-to recipe for omnivore guests because all components are easy to make ahead and I do a taco bar where guests can serve themselves.

The Kalamata olive tapenade was fabulous, but the white bean garlic dip was only so-so. I'd rather buy a tub of hummus at the grocery store instead of dirtying my blender (for the same approximate taste).
