RAW: The UNcook Book (Juliano)

Of the four raw cookbooks I have, this one is definitely my favorite.  It is not for the raw foodist who wants to uncook in a hurry.  Ingredient lists are sometimes substantial and prep time can be lengthy (for example, the macho nachos call for six other recipes to be prepped from the book before they can be put together), but the recipes I've tried are all awesome.  I would say this book is more for the gourmet raw foodist and definitely for someone who has a bit of time on their hands.

Tuna Sandwich: this is the best tuna substitute I've tried.  I used the powdered dulse but left the powdered kelp out and it was perfect for me.  I didn't make the Real Toast but wrapped it up in lettuce leaves with tomato and avocado instead.

Mashed Potatoes: I make these often.  I only use a half cup of cashews because I've been trying to reduce my nut intake and they still come out fine.  I don't know what the heck "Celtic seasoning" is, I assumed Celtic sea salt so that is what I used.  One tablespoon was a bit much so I'd recommend starting with 1 teaspoon and adding from there.

Quinoa Tabouleh: awesome....I don't know what else to say about it.

Firewater: this stuff will totally kick start you in the morning.  I grow my own chile peppers and use orange habaneros to make this.  I have high hopes that I can get past my coffee/caffeine addiction and replace it with this.

Caribbean Smoothie: this is my absolute favorite smoothie.  I doubled the mango and left out the papaya since I didn't have any.  I'm totally tempted to whip one of these up someday and drop a shot of dark rum in....I know.....bad raw foodist!

Cilantro Pesto: has a really nice bite to it if you use the whole habanero and the addition of the minced ginger is great.  I use pine nuts instead of walnuts and use the pesto as a cheese substitute for Mexican pizza.
