Veganomicon Recipes

OK, I bought my copy of Veganomicon (cookbook from the same authors as Vegan with a Vengeance and Vegan Cupcakes Take Over the World) last week at Barnes & Noble.  Over the weekend, I made my first recipes from the book.  I made the Chickpea Cutlets with the Mustard Gravy.  I also made the Tomato-Rice Soup with Roasted Garlic and Navy Beans.  For sweets, I made the Chocolate-Chocolate Chip-Walnut Cookies.  Everything was really good.  I've been having a difficult time staying away from the cookies, they're so good (very thin, crispy, chewy!).  Has anyone else here purchased this cookbook yet and made any recipes?   I'd love to hear what people are making and enjoying from this cookbook.  I really enjoy Isa Chandra Moskowitz and Terry Hope Romero's other cookbooks, and I'm looking forward to exploring more in this new book.

I made the Dill Basmati with Chard and Chickpeas. I think the recipe means like, 3 and 1/2 c. water instead of 2, because it calls for 2 c. rice. I added some lemon juice, some garlic, and more cayenne, and used about 1 T. dried dill (didn't have fresh). Its tasty, but especially if you live alone and will be eating it all yourself, it makes a TON. Next time I'd probably use the same amount of greens and dill and half the rice and chickpeas.

Anyone know if it will freeze well?

i made the Snobby Joes, i was kinda disappointed because i was expecting something close to manwich. it calls for 3 tbsp chili powder and 2 tsp oregano. i used 1 tsp chili powder and 3/4 tsp oregano and all i could taste was the oregano. we ended up adding some vinegar and ketchup, and then once on the bun pretty much topped it with more ketchup.

The Snobby Joes definitely don't taste like manwich. It would be nice to find a recipe that matches Manwich since that stuff is awesome. I do like the Snobby Joes though and make them quite often since I'd rather have something I make myself than out of a can.

I usually leave out the oregano, since I don't think it really goes. For the chili powder, I use ancho chili powder and a small amount of my indian chili powder for some heat, since anchos are very, very mild. I'm going to experiment with different chili powders once I finish off the ancho powder. I also add an additional tablespoon of mustard and 2 tablespoons of worcestershire sauce. Gives it a tangier flavor.

I've never used Manwich but I like the Sloppy Joanna's from Yellow Rose Recipes better than Snobby Joes from Vcon.  It's basically rehydrated and seasoned TVP.  So maybe you can season TVP with Manwich?  Is Manwich vegan?

I'd like to make the Caesar Salad but I don't have capers for the dressing.

Will the dressing still taste good without the capers, or is there something else I can substitute?

i think a few pages back someone asked this. i suggested sour pickles (like cornichons..not sure if i spelled that right..those teeny sour pickles that aren't dill, but aren't sweet pickles). other people said  stuff too, but i can't remember..

Try Vegan Dad's recipe for Sloppy Joes - it's incredible. It tastes exactly how I remember Manwich tasting as a kid.

EVERYDAY CHIPOTLE VEGETABLE TAMALES- the filling in these is excellent, but do be sure to double the baking powder and use well-seasoned broth. The masa recipe given isn't fluffy or flavorful enough.

WALNUT-MUSHROOM PATE- yum! soooo yum. it has a great smooth and rich flavor. I added a lil extra balsamic. Big hit with omni family!

BULGAR, ARUGULA AND CANNELLINI SALAD- loved this one. it's definitely got a good, tangy bite to it and is basically a meal on its own.

VIETNAMESE SEITAN BAGUETTE- stop sitting at the computer and go make this now.

HERB SCALLOPED POTATOES- I found these really bland and boring. The dried herbs and flour made it sticky and dry without enough flavorful sauce.

ISRAELI COUSCOUS W/APRICOTS AND PISTACHIOS- Good and different! I love big couscous and the flavors in this one were a great complement to a more savory meal.

CHICKPEA CUTLETS- Really good! Easy to make, tasty and a great "meat" type dish... as others have noted, just give in and fry them. A friend's omni parents loved these as well.

ANCHO LENTIL SOUP- good but not amazing. I liked it fine, but it was a bit bland. Good concept, but a bit weak in the execution.

CHICKPEA NOODLE SOUP- Yummy, salty, warm and comforting. Not a dish to make for company, but it's some wholesome tastiness anyhow.

SPICY PEANUT AND EGGPLANT SOUP- Fattening and delicious! Friends were practically licking the pot. 5 stars.

JAMBALAYA- Again, a bit weak on the execution. Here's how to fix that: use tempeh instead of seitan. Marinate it in Bragg's, mustard and Tabasco and saute with the vegetables. Double the spices, stir in a whole package of soyrizo towards the end and don't worry about baking it---just simmer on the stove for about 30 minutes. Add a couple of dashes of liquid smoke at the end. I know it's a lot of modifications, but it makes some bangin good eats in a huge quantity.

SPAGHETTI AND BEAN BALLS- my beanballs (pan fried) were total mush and made me cry :(

SPINACH LINGUINI WITH PESTO AND ARTICHOKES- Yum! yumyumyumyumyum. This is a really good, garlicky and flavorful dish and it was a breeze to put together. I've made it a bunch of times and it rocks.

PUMPKIN BAKED ZITI- Doesn't this one sound sooo good? I thought so too, but it ended up kind of bland and really just...meh. It wasn't worth the effort in my opinion.

CASHEW RICOTTA, BASIL-CILANTRO PESTO, MUSHROOM GRAVY- These are all good, easy, inexpensive basics that you can rely on for a zillion different recipes.

I just purchased this book a couple weeks ago and so far have made the Fudgy Wudgie blueberry brownies (EXTREME YUMMINESS) and the Snobby Joes (surprisingly tasty and hearty, my meataterian BF even gobbled up two of them). I am really loving this cookbook so far..its fun to read and exciting to try!

chickpea quinoa pilaf- good but nothing amazing.  only thing i did different was to use ketchup instead of tomato paste and i added some frozen spinach since it was sorely lacking in the vegetable area.  after tasting it i added some nutritional yeast and i tried it with some pecans and cashews in it, which really helped spruce up the texture which otherwise is pretty blah.  today i had some leftovers and put marinara sauce on it, which was good.  i plan on making a cheezy sauce and mixing that into the rest of it, maybe with some steamed broccoli too.  like a cheezy brocolli rice-a-roni.. er.. rice-a-phoney?

I made the black bean burgers last night...this was the first time I had ever used vital wheat gluten, and was pleasantly surprised by the firm texture and subtle flavor of the recipe! The leftover patties reheat up nicely, too!

if i had to pick one id say banana.. only cus theres that banana black bean recipe on here that people seem to really like so maybe it would be good.  do you have peaches?  i think they might be a nice sub.

Success! (quinoa and black bean salad)

I did the scallions, cilantro, WHITE wine vinegar, safflower oil, quinoa, black beans, a banana, 2 shredded carrots, frozen corn, and salt. Really good!

That is one seriously good looking salad.  WOW

Just got the book and am thinking of starting using it to make that Portabella Salad with Spicy Mustard dressing....it has all my favorite things in it.....
