Y'know, Adagio, I think the potatoes would serve as the binder for about as many cooked lentils as they would hold... one of the diners in town here makes WONDERFUL vegan burgers out of whatever veggies they have in the kitchen and lentils, bound with potatoes and cooked on the grill (of course, there is no ritual purity in a diner grill, but hey). I don't think they're very precise with the measurements, and they sure turn out to be tasty. I'd simply season it heavily with pepper and (knowing me) probably cooked onions and/or garlic, lemon zest, and parsley.
Whenever I make vegetarian rissoles of any kind, I fry them in very little oil and on medium (rather than high) heat. Give them lots of room and time to get toasty. One thing is for sure-- you don't want to scorch them, since burnt lentils smell like coffee and aren't too tasty.
