Calling expert vegan bakers! I need some oil-swapping advice.

I searched around for this in an existing thread and didn't find it, so I'm sorry if this is a repeat!

Lately I've been trying to cook and bake with less oil, so I've started swapping apple sauce in a lot of recipes.  (By the way, Happy Vegan Chocolate Chip Cookies are just as amazing with apple sauce.)  My problem is that when I've done this with my tried and true muffin recipes, even though the muffins turn out as delicious as ever, they really stick to the muffin papers.  I know I could oil the pan and not use the papers, but I was trying to find a way to, well...  not use oil.  :-\

Does anyone have any idea of how I can alter the muffin recipes so that I can use apple sauce, but keep the muffins from sticking to the paper so badly?  Thanks!  :)

Replacing the oil for applesauce is a crime against humanity. Any baking expert will tell you that. Just grease the damned muffin tin. Oil will not kill you!

It doesn't take that much oil to grease a pan. I doubt it'll really add that much fat/calories...

I find that my cupcakes stick less to my silicone liners than the disposable paper type. I don't sub with applesauce, though, so I dunno if that's much use to you.

agreed with sb... if you want a fat-free breakfast, make some bread :)

Ha!  Thanks for the tough love, secondbase.  I'll just oil the tins next time and skip the paper and see how they come out.

Personally, I never use cupcake papers for my muffins...I just spray the tins with the "no calorie" cooking spray, like Pam. I don't bother with actually greasing the pan with "real" oil, spray is so much easier and you don't really need much.

Yes, use a fat free cooking spray. Or a non-stick muffin pan.

cooking spray isnt fat free. Its actually made of fat.

Have you tried silicone liners? For all types of oil free stuff check out the forums on www.drmcdougall.com
