Car Camping Food

Yes.  Again.  I did a search for our umpteen other threads like this and couldn't find the ones I remember.

Scenario:  I'm going weekend camping in a few weeks with a friend.  He told me to plan the meals (yeah, I laughed, too).  But, if someone is open to eating vegan...  Since it's car camping, I could bring a cooler and have some things prepped or partly premade. 

Caveat:  He's type 1 diabetic.

Help:  I don't know if all of these are good camping foods or if someone has a better idea.

Friday Dinner
- Pakistani dahl (with what? no rice because I think it'd be too much carbs) - Or is dahl too non-campy?
- baked apples

Saturday Breakfast
- plain oatmeal with a variety of spices, nuts, and dried fruit options
- fresh fruit
- coffee

Saturday Lunch
- chickpea salad and veggies in whole wheat pita (or a lesser "vegan" packable lunch?)
- dried fruit

Saturday Dinner
- veggie stirfry (on what or with what mixed with the veggies and what sauce?), what else? (I don't really like stir-frys)

Sunday Breakfast (same, but mix-it-up-able):
- plain oatmeal with a variety of spices, nuts, and dried fruit options
- fresh fruit
- coffee

Sunday Lunch:
- ?
- blueberries

I didn't think about a fire.  Baked apples sound awesome!!!*drool*!! and are on the list fo shor.  I was thinking we'd go dessertless, but fruit is allowed (I think).

hmmm, I know i started a camping foods thread but I'm getting ready for work so can't search now.

When we go camping in the car for the second day we'll often take spag bol.  Have precooked pasta and freeze it.  And bolognaise frozen.  Then take them as frozen blocks in the cooler.  They keep other stuff cool and defrost over the next day.  Same for chili, except I then take the Uncle Ben's precooked rice sachet thingies.

I'll try to find the other thread later, coz  YOU gave me good advice HH.

you can also roast sweet potatoes in foil over the fire.

i usually bring stuff pre-made or easy to prepare.

e.g., premade stuff in the cooler:
tofu "egg" salad
potato salad
hummus
pasta salad

easy to make:
pasta
stew from pre-cut vegetables and such

breakfast:
oatmeal
pancakes (you can pre-mix the dry stuff at home and take it in a ziploc)

i wouldn't do stir-fry or anything that takes much work or precision, as i'm quite lazy about food when camping.

Ooh, I like the idea of stew and/or chili (maybe instead of the stir fry?).  My family also used to do spaghetti when camping, although we made it there.

bread (or bagels, or whatever) and peanut butter and jam for sandwiches

pre-made veggie burgers (preferably already formed into patties and wrapped in foil, then they could go straight on the campfire, or you could fry them) and buns and toppings

burritos (can of refried beans, salsa, tomatoes, olives, etc., and tortillas)

"pocket stews" (chopped veggies and seasonings wrapped in foil and put on the campfire.  Things like potatoes, sweet potatoes, carrots, onions, mushrooms, etc.)

sloppy joe mix and buns

one of my favorite camp foods is a sweet onion scored and stuffed with bits of eb and seasoning salt, foiled, and tossed onto coals for about 30 mins. i would stay clear of potatos, but pack hummus for sure. i am more of a snacker than a meal maker when i am camping though.

have fun camping, we might be going saturday for the night.

So far, sb's suggestion has the most merit, but to explore all options:
Jess - what do you do with the sweet onion once it has roasted?

Friday Dinner
- hummus, blueberries, 'n other snacks
- bean and "bacon" soup (based on the stew idea)
- couscous with zucchini, currants, garlic, and pine nuts over greens (based on the salad idea)
- baked apples

Saturday Breakfast:
- plain oatmeal with a variety of spices, nuts, and dried fruit options
- fresh fruit
- coffee

Saturday (packable) Lunch:
- chickpea salad in whole wheat pita
- veggies
- dried fruit

Saturday Dinner:
- hummus, blueberries, 'n other snacks
- ginger peanut soup
- Friday's couscous with added roasted bell peppers and sliced mint leaves over greens
- roasted chili powder fruit kabobs

Sunday Breakfast (same, but mix-it-up-able):
- plain oatmeal with a variety of spices, nuts, and dried fruit options
- fresh fruit
- coffee

Sunday Lunch:
- ? (possibly just leftovers)

just eat it! try not to burn yourself, i am sure you could add it to things, but there really is no point.

I missed this thread as I was car camping this last weekend myself.  ;)

For breakfasts I had vegan whole wheat/spelt english muffins with  black bean refried beans spread on top.  The muffins were grilled first. The refried beans were kept in a cooler in tupperware.  I also had oatbran and cinammon with and fresh fruit (I did some hard core canoeing, hiking, carrying very heavy packs so I needed my breakfasts to be hardy).  Lunches were snack type foods: cliff bar, dried fruit, pumpkin seeds, precut and trimmed carrots.  Dinner was a premade ahead of time and frozen in a heavy duty baggie: lentils, bulgur wheat, chopped onion, can diced tomato, lemon pepper, cummin.  I simply boiled water and dipped the baggie in the water for three minutes and then slit the bag open over my bowl to empty the contents.  My omni boyfriend had his own made ahead of time baggie of stroganoff to dip in the boiling water in a baggie and he had noodles in the pot of water.  So we were able to use one pot for two meals.  The second night I simply used a vegan freeze dried and organic meal "louisianna red beans and rice" (surprisingly there were only six ingredients total listed on the package which is impressive for a freeze dried meal).  I also made a batch of banana bread for desserts and snacks and we had roasted fresh pineapple (a whole pineapple keeps for several days out there on its own).
