Bumblebee Chili! It's fun, super-easy, not very spicy (you could add spice if wanted), and is family-friendly and unintimidating to omnivores and unadventurous eaters.

Years ago I had my first veggie chili at a great restaurant that offered lots of veggie selections. It had lots of beans, sliced carrots & black olives. Sounds weird, but I loved it & that is now how I make my chili. Of course, I add lots more chili powder than they did! ;)
Fun project! Chili adapts well to vegan preparation, so you've got the field wide open.
