coconut cream to replace mayonnaise??

I am trying to make a vegan version of the traditional southern dish, Shrimp and watermelon salad.
Aside from my shrimp-replacing issues, it calls for a CUP of mayo in addition to a half cup of (I'll use soy) yogurt.

obviously I can use vegannaise, but it's still a LOT of hydrogenated fat.

I was thinking of trying to use coconut cream but I've never really used it before so I'm not sure if it's thick enough.

My vote would be no. Do you mean coconut milk? Or the stuff in the alcohol section that you use to make Pina Coladas? The pina colada stuff is way super coconutty, and the coconut milk has a hint of coconut too. You could always use more soy yogurt and less veganaise, then add some yummy spices, that's what I would do. Good luck!!

you know how when you buy tinned coconut milk, it's seperated into a lump of solid stuff at the top of the can and liquid at the bottom?
the solid(ish) stuff is the cream.
Maybe it's just because I live in a Domminican/Puerto Rican neighborhood, but here you can buy just the cream tinned.
it's THICK. I've never used it though and I'm nervous.

I'm not to worried about adding a coconut flavor, it might be a nice addition to the other spices in the dish.

I think coconut cream would be a nice addition. Also you might use cashew cream, then you could season it to have a more mayo taste?

Just to clarify, Veganaise isn't hydrogenated.  It's still not that healthy, but it's just canola oil. http://www.followyourheart.com/vegenaise.html

I think coconut would be yummy with "shrimp" and watermelon salad, but if you didn't want the coconut flavor, be relieved at the fact that there is no trans fat in Veganaise.

and yeah, even though veganaise isn't transfats, it's still just not that good for you and if I can replace it with a healthier fat then I'm a much happier camper.

yes i would definately do it, but i have coconut in almost everything i eat hehe
