ENNUI CHILI: Question for Ungreen

Hey, Ungreen, I want to try your Ennui Chilli--are the beans soaked and raw, or cooked from a jar? I notice the garbanzos say "cooked" but there's no indication about the beans and hominy.
Hi yabbitgirl! I was just using what i had around, which was soaked and cooked garbanzo/chickpeas and canned kidney beans. So, in both cases, I threw in "cooked" as opposed to raw beans... I bet you could throw in soaked beans and they'd cook just fine, though. The hominy was canned, as well, since I've found that it takes forever to get the hominy as soft as I like it... Even being canned and slow cooking for 7 hours, the hominy still wasn't quite soft enough for my taste! Hope that helps. I'll check back later in case you still have questions... Good luck! :)
Thanks petal...I know what you mean about the hominy. I can only get the dry here, so I soak it and boil it in my pressure pan for about 20 min, and then fry it up with onion and whatever fixings. I will try this soup and "leave you know". May I say your new photo is ever so attractive.
OHHH this stuff is good! I boiled my beans and hominy together while preparing the rest, and cooked it on the stove. For seasoning I used an envelope spice mix, and I added a can of seitan "mock duck" (which btw is visually realistic enough to be outgrossing, so beware). Yummee. I tried to reduce quantities but still ended up with a huge pot full--not sure it would have fit in my crockpot anyway. No matter, it'll freeze. Can't wait till dinner...we'll see what DH says. If he eats and likes it, you KNOW it's good!

... Anyway, your alterations sound great. The pressure cooker especially sounds perfect for this... I really need to get one of those! I hope your DH ended up liking the chili. Mine has a huge sweettooth, so the maple syrup made it quite a hit with him! :)
I gotta confess I left out the maple syrup, we don't have it here and the canned tomato was sweet enough. But it went over big! He actually suggested (celestial choirs here, please), that I put TOFU in the next time! I canNOT believe my carnivorous DH is enjoying tofu in all its forms. Thanks to VegWeb, and thanks to you!
He didn't try the chili till the 2nd day, when it was even yummier. I cheated and used a package of premade seasoning--I figured they measure better than I do. I made me some goooood chili with your help!!
