Favorite summer recipes?

Well, summer is quickly arriving, and it's already getting pretty warm in Georgia. I was wondering what your favorite summer recipes are. Things to grill, and especially things to cook inside that don't require much (any) heating. I'm alway looking for new things to throw into my meals.

Tomatoes!

They are possibly my favorite thing about summer. Tomatoes with sugar, tomatoes with salt and pepper, tomatoes plain, tomatoes sliced up with onions in vinaigrette, tomatoes on toast, tempeh/lettuce/tomato sandwiches, salsa!!

I like to grill fresh pinapples and peaches. I like to core and stuff onions with garlic, drizzle with balsamic vinager, and grill them. I also like grilling kabobs w/ onion, mushroom, pineapple, bell peppers, and zuchinni. Maybe basted with some kind of vinaigrette or hot sauce.

And I love cold salads with some kind of grain, black beans, corn, and whatever chopped veggies I have handy, maybe with a little bit of oil, lime juice, garlic, cumin, and chipotle peppers.

And fruit salad! I like citrusy ones spiked with cayenne pepper, salt, and lime.

I love summer. And food. As you can probably tell.

Gazpacho or Ajoblanco (both on here)
Large salad with everything but the kitchen sink, served very cold, dressed with olive oil and vinegar
White asparagus with avocado slices, dressed with lemon and served with vegan mayo or sauce rose.
Fruit, glorious fruit--cold from the fridge.

Add a little crusty wholegrain bread and a nice rose, and you're good to go!

I worked in the kitchen of a retirment home back in high school..one of the chef's used to make this awesome fruit salad..watermelon, honeydoo, papaya, blueberries, strawberries, bananas, coconut shreads..I think maybe some orange juice..

Simple but wonderful on a summer day.
