Freezer Meals

I'm trying a new method of cooking for my omnivore family (and practically carnivore hubby!) and it's based of off the Don't Panic - Dinner's In the Freezer book. The only problem I'm running into is the fact that I can eat almost NONE of these recipes, lol. Some of the desserts and some of the side dishes could be experimented with and substituting things like ground flax seed for eggs, non dairy milk, etc. Do any of you prepare vegan meals that you freeze either prior to or after cooking?

I know some people will freeze tofu to change the texture - could this work with freezing slices and marinades in small quantities like you would with meat? I'm experimenting and am happy to update those interested but I was just curious if any vegwebbers had ideas or tips they'd like to share. ;)b Thanks!

Hey, I own that book too! I've found that you can freeze just about anything and it cooks up just fine. Some sauces separate when frozen/thawed but honestly, I'd just throw whatever you're making into the oven and see what happens. I have frozen tofu in marinades as you describe and have had good luck.

Soups, chilis, and bean dishes freeze incredibly well. So do greens!

Enchiladas, lasagna - um, lasagna; wish it wasn't so hot today.
