Fresh Tofu crusts?
Hi all, I was wondering if anyone had experience buying fresh tofu (where they cut your portion off of a giant log as you stand there). I just got back from the Vegetable market with a huge chunk and is has this sort of dark layer that was on the outside of the tofu log and I was wondering if anyone knew if that was safe/good to eat. Also, any ideas on washing tofu? These markets are exactly the cleanliest places on earth.
