How to store Seitan

So I want to start making my own seitan (pre-made is so expensive). The problem I have is all the recipes I find call for you to make a bunch of it at a time, its just me and my dog so what is the best way to store seitan to help it last longer?
I wrap it well in plastic wrap and then aluminum foil and freeze it. It freezes very well and will keep a couple of months. I usually freeze it in the big balls and defrost in fridge. It is not hard to make but when I do make it I want to make a couple of pounds at a time.
