Hungarian hot peppers

My mom has potted veggies this year and an over~abundance of Hungarian hot peppers. They are a mild pepper and I have no idea what to do with them! I put them on pizza, added into my homemade salsa but I have no other ideas. Help!! I don't want to waste them. :-\
Have not heard of these so I'm unsure about their size, whether they are akin to a bell pepper or small like a chilli pepper, but if the former how about chargrilling or roasting them, skin on, then peeling and jarring in a brine or oil for a meze or tapas style appertiser?

I'd imagine they'd work there.
Also, dice one up and stir it in with some sort of burger mix (maybe a touch of cilantro witht hat, too?). Like Nature's Burger from Fantastic Foods, or one of the awsome black bean burger recipes here on the site.

They're longer and skinny ~ more like a chilli pepper. I'll probably roast them but at want temp and how long? Thanks for the ideas! I knew my veggie peeps would have some ideas for me. ;)

You could make a ristra too! :) It's a fun thing to do with lots of peppers. Then someday grind them into hot paprika and make a paprikash!

Well, I tried once, but it didn't look so good :( although it worked to dry them out. You tie the peppers with string, by their stems, in little bunches (on the same piece of string). Then you sort of wrap them all around a wire coathanger in the pattern you want. And then you hang it up to dry... I guess you need to live someplace pretty dry too, or find a very dry place.
I've seen some pretty elaborate ristras around here. There's a chile store in Santa Fe that sells very nice ones!
Dang... that sounds a little more crafty than I'm capable of.
Cherbear, sorry have no actual recipe but would hazard a guess that you roast the peppers, making a slit either at the top end or down the side, pull out any seeds and membranes, then fill with your favourite "cheesy" alternative, I'm not vegan myself so I couldn't give you a good one to choose. I have seen cheese-stuffed peppers as a meze/tapas snack, I think they tend to be jalapenos tho! If you try this, perhaps you might care to share with the rest of us? :-*
Thanks for the amazing ideas! I found some recipes for marinated, pickled, canned peppers that I might try. I don't really care for cheese alternatives and have a difficult time finding nut. yeast so I think I'll try pickling them. I'll let everyone know how they turn out. :)
