I made the best thing yesterday!!!

I had bought kale from the market and wanted to try something new with it. So I looked up kale recipes and kept getting recipes for sauteed kale. I decided to try it. It called for kale, onion, garlic, and crushed red pepper flakes. We also had some purple carrots in the fridge that needed to be eaten so I used those, and got a little creative with almonds and sesame seeds and made the best dish ever!!!

1 lb kale, washed, tough stem cut off
1 small onion, cut lengthwise, then thinly cut crosswise
1 garlic clove, diced
2 carrots, sliced thin with a vegetable peeler
1 tsp crushed red pepper flakes (more if you like it spicy)
1/4 cup sliced almonds
1 tbsp toasted sesame seeds

heat olive oil in large pan, add onion, red pepper flakes and garlic, stir for 2 minutes. Add half of the kale, stir for 1 minute, then add the rest of the kale. After 6 minutes, add the shredded carrots and cook 2-4 more minutes, until kale is tender. Toss in almonds and sesame seeds.

We served it on top of whole wheat angel hair pasta. Orange carrots would work too, though I think purple carrots are a little sweeter. It tastes so good, and everything in it is so healthy for you! Please let me know what you think, I hope everyone enjoys it as much as my family did!

This looks like an improvement on the absolutely DELICIOUS kale my favorite vegan restaurant includes as a side dish with their higher-fat-and-protein dishes.  The carrots, almonds and seeds sound like scrumptious innovations!  I will definitely try this.

I absolutely LOVE kale, I was raised on it, but gramma would cook it all day, which it does not need.

You have come up with an absolute powerhouse of a dish, the nutrition in this must be very high!  So nice to come up with something that is as tasty as it is wonderful for the body. Thank you.
