Just Tried the Larabar Recipe from VegNews Magazine...OMG

I wasnt sure where to share this at so I hope this is the right place.  I saw the recipe for making your own version of a Larabar in the VegNews magazine so I had to give it a try.  It's so simple, just add a cup or two of raw whole cashews to a high speed blender until they are crumbly.  Then add a cup or two of pitted dates and process until smooth.  You can add a fruit or sweetener next and process or leave as is.  It takes a bit of scraping and moving the mix around and blending to get it blended well.    I added cocoa powder.  Then scrape it all out into a baking pan covered with aluminum foil (or other type of paper) and spread it out/press it down.  Refrigerate for at least half an hour.  Viola.  I made this last night and had a bar this morning.  These are sooo good with a little cocoa powder added.  Warning: very rich and filling so you only need a little at a time.  I used one cup of cashews and one cup of dates and 2 T cocoa powder and it made a lot.  I feel like a brick now but it was sooo worth it!  Who would think two or three simple ingredients could make something so good?

do you have a copy of the recipe you could email me? i don't get that magazine anymore after the whole photo uproar...

Sure amymylove I will just type it out here.  I was worried about posting something from that magazine with the whole meat photo controversy but I would hate to see the only mainstream vegan magazine out there (that I am aware of) lose out for it.  There is still some worthy news and information in there although I am not keen on the commercialization of it and abuse of the photo ops.

Raw Energy Bars

(makes 12 bars)

2 cups raw cashews
2 cups pitted dates

Into a food processor, place cashews and process until they are well ground.  Add dates, and process unti the mixture starts to form a large mass.  Flavor the bars according to your preference (see below) and process once more.

2. Line an 8X12 baking dish with aluminum foil.  Empty the dough into the foil-lined pan, and press it down with your fingers so that it's uniformly thick and even.  Refrigerate for about 30 minutes, or until dough is firm.

3. Cut into 12 bars and serve.  If not eating immediately, wrap bars individually in plastic wrap and store in the refrigerator or freezer.

Custom Mix-Ins:

Lemon or lime bars
add 2 tablespoons lemon lime juice and 1 tablespoon lemon or lime zest to the mixture after incorporating the dates, and  pulse a few times.

Cherry Blossom bars
add 1/3 cup cherries to the mixture when the dates are added.

Fancy Apple bars
add 1/3 cup dried apple rings and 2 teaspoons cinnamon to the mixture when the dates are added.

Chocolate Explosion bars
Add 2 tablespoons cocoa powder and 1/4 cup cacao nibs to the bars after incorporating the dates, and pulse a few times.
