make ahead meals

I'd love some suggestions of meals that can be made a few days ahead and either put in the fridge/freezer for reheating

Veg lasagna is a staple, but when  I tried some kind of enchilada bake-but the tortillas turned to mush, so I figured I'd ask for suggestions before trying another.

Any favorites?  Please let me know how long they can last in the fridge or if they should be frozen. Thanks in advance!  (I didn't see a previous post but please share the link if there is one)

beans, rice, chili, pasta, raviolis, soup, homemade seitan, and cheesy bean and cheese enchiladas froze well for me

Thanks.  That "Freezer Cooking" link has lots of ideas.  The next few weeks I won't be getting home until after 7:30 and when my lunch break is at 11:30, I'm way too hungry to wait much longer to eat.  If I don't cook on the weekends I'm sure it will be frozen Amy's burritos - which are delicious, but get boring after a few nights in a row.

I have a lasagna and potato/corn chowder, and portabella mushroom chilli in the freezer to hold me over this week.  I'll have to play around with some of your suggestions next.

Dahl dishes freeze well. I love red lentil dahl frozen-and-thawed because it gets even creamier. When you defrost it, the water separates and it looks weird but just stir it all together and heat it up. Lushness.
