Does anyone have any suggestions on making my own mock meats?

Buy a copy of La Dolce Vegan. It's a great cookbook with a huge variety of recipes and has a section on mock meats (turkey, chicken, fish, ham). I haven't tried those specific recipes yet, but every other recipe from that book has been great for me. Also, Vegan with a Vengeance has seitan recipes that people really like.

There are several seitan recipes on this site; I include one in a recipe I posted here called "Mexicali Seitan with Mushrooms." Just remember that when making seitan (wheat meat), add any flavouring agents (mushroom powder, herbs, stock granules etc) to the gluten mixture in the making; it takes up the flavour better than adding it afterward. We all have our favourite ways to make seitan; boiled seitan is popular, but I find I prefer it baked. If using textured soy protien crumbles (TVP or TSP), I find they work better for me in soups and chillis and things that are highly seasoned. And of course, there are wonderful things you can do with tofu etc. If you marinade or mix the tofu with your flavouring agent and let it stand for about 20-30 minutes, it will take on the flavours like a chameleon takes on the colour of its surroundings. Enjoy the adventures.

I don't know about mock meat, but about a homemade boca type burger, I'd recommend Louise Hagler's burger book. They are going cheap over on healthy-eating.com
