New recipe I tried w/ vegan chicken strips

Hey!  I just made this Paula Deen recipe...I veganized it...it turned out sooo yummy I wanted to share it..someone a couple of weeeks ago asked about using those (vegan) chicken strips from morning star...heres a good way to use them!
Hot Chicken Salad (Vegan version):

1 pkg Morning Star Chik'n Strips, thawed and chopped
1 cup Veganaise
1/2 cup chopped or shredded Follow your Heart Monterrey Jack style vegan cheese
2 Tbs. chopped onion
1/4 cup chopped celery
1/4 cup chopped almonds
dash of garlic powder
sea salt and pepper to taste
1 cup crushed potato chips ( I used Terra chips Yukon Golds)

Mix all ingredients except potato chips in a large bowl.  Pour mixture into a lightly oiled baking dish and top with the potato chips.  Bake at 350 for about 20 minutes and serve.  I served this w/ green salad w/ homemade vegan ranch dressing, roasted green beans, and roasted potatos.  I know it sounds sort of fattening, but this is total comfort food for a chilly night!

Thanks for sharing that! I just printed this out and showed it to my husband. I think we're going to try it for dinner tonight. You're right...I think it looks perfect for a cold, snowy winter evening...exactly what we've got here.  ;)

Heres the recipe for the ranch dressing...I sort of used ingredient quantities based on my tastes, so feel free to adjust the seasonings. 

1/2 tub of Tofutti Sour Supreme
1/2 cup Soy milk, unsweetened(or more if you like a thinner consistancy)
1-2 tsp malt vinager (or whatever you have..just not dark  balsamic)
1 tbs parsley flakes(I used dried)
1/2 tbs dill weed (I used dried)
1/2 tbs dried chives
1 dash of garlic powder
1 dash of onion powder
sea salt to taste
pepper to taste, optional

blend all ingredients in bowl or in food processor.  Adjust the seasonings to suit your taste.  This is better after it sits in the fridge for a while, but mine didn't last that long!

I did in fact try this recipe tonight. It was good, but next time I'm going to use the TVP-type "chikn" strips. We found the Morningstar Farms strips WAY too salty. I guess we're not used to eating processed stuff anymore...I forgot how much sodium they put in that stuff! We felt like we had rinsed our mouths out with salt water after we ate.  :-X  But I'll definitely make this again, with a different product.

Hi Nancy- I'm so sorry it was too salty for you guys!  I had steamed my chk-n strips ('cause putting them in the microwave makes them turn into little pebbles) so maybe it got alot of the salt/seasoning off?  Anyway, that's the beauty of sharing recipes isn't it?  We all "adjust them according to taste"!  Hope it turns out better next time!!
