I always have cashews! I was thinking of making potato/broccoli soup tonight, so I'm already in a potato mood . I'll check that I have everything else in the recipe, and these might be dinner tonight : )
I hope you both love it! Make it saucy. It does take an hour+ to bake.

definitely sounds like something we would like! But I worked a bit late last night and wanted something a bit quicker so I stuck with potato/broccoli/chickpea soup. Maybe this weekend! : )

Oh She Glows Pull apart fluffy white dinner rolls http://ohsheglows.com/2010/09/30/vegan-fluffy-white-dinner-rolls/ I used white whole wheat flour, so mine weren't white, but otherwise followed the recipe. I used EnerG for the egg replacer, and baked for 17 minutes as she stated. Mine were browned, but could have used a couple more minutes inside. They are good, but not spectacular. There's something missing in the flavor. They would have been better with that extra baking time, so I think the texture would have been good. Fairly fluffy, and they rose well. Not a recipe I'd turn to again, though.
The only thing I changed was to press then cube the tofu small and bake it until golden at 375. Other than that, this soup is fantastic as is if you dig a little spice and vinegar... Very cheap and easy I almost always have all the ingredients on hand. TRY IT :)

Vegan Planet blog by Robin Robertson--Tiramisu for Two--So rich and decadent tasting, yet quick & easy! Makes a great fancy dessert with minimal effort. I'll definitely be making this again. FYI, my boyfriend and I split one of these servings. Because of the extreme richness, we found this to be more of a reasonable serving. This is an adaptation of the Tiramisu Parfaits recipe that is featured in her cookbook, Quick-Fix Vegan.

If you like spicy, definitely increase the chili paste. The 1 teaspoon I used that the recipe called for isn't really spicy at all (although Robin calls it moderately spicy). Using only the 1 teaspoon chili paste, however, did allow my boyfriend to also partake in this, as he doesn't like spicy food at all.

No Face Plate Falachos http://nofaceplate.blogspot.com/ Genius! The post is more of an idea than a recipe, but super creative. I simplified it a bit (as suggested) by using the Fantastic Foods falafel mix and prepared kalamata olive hummus. Definitely inferior to homemade, but they work well to pull everything together. I did the thinned tahini and hot sauce in squirt bottles. I also thinned and warmed the hummus, and seasoned my pita chips. I didn't do the tabbouleh salsa or pickle mix dice, so I just used some chopped parsley (tiny bit) and minced dill slices. I also added tomato, green onion, and lemon wedges. So good!

Simple Italian Sausages http://www.theppk.com/2012/01/vegan_sausage/ These are delicious! I've tried making other Italian sausage style things before, and I was disappointed. I think it was the steaming process that really set these apart! They were plenty moist without falling apart. The spice mixture on these is absolutely perfect for me. I used the tomato paste instead of oil, and I don't miss any richness at all. Next time, however, I will put my beans and broth into a blender before I add the rest of the ingredients, because apparently I'm no good at hand mashing. I still have whole beans! I think the texture would be better if they were completely smooshed up. Oh, and I did a nutritional analysis on these, and each sausage has 225 calories and about 33 grams of protein (if anyone is interested!). I'll be making these this summer for grilling!

Fat free Vegan
Thanksgiving meatless loaf: This was really good and had a great texture. It's not meaty, but firm enough for me. I baked it in a loaf pan and spread about 1/4 cup ketchup on top before baking. I used only about 1/4 cup of walnuts but I don't think it would make much of a difference if you omitted them altogether. I also didn't have any celery and not enough parsley so I had to add a little basil as well.

Cashew Queso: So, so awesomely delicious. Perfect! I used a roasted red pepper instead of a fresh one, otherwise I followed the recipe to a T. I used this in a casserole with mashed sweet potatoes and leftover chili. It was one of the best meals I've ever had.
Smoky Maple Sausages: They are very sweet, so they don't work with everything. But they are really good with sweet potatoes. I think they'd be great chopped up in mac and cheese too. Will make again.
Ancho Lentil Tacos: Fantastic, at least the second time I made them. The first time I used regular ground chile powder and sriacha for the hot sauce and that made it just hot. The second time I used ancho chile and tabasco and it was great. I'm making them again soon and then I'll use my new found favorite hot sauce: Frank's with lime. It will be fabulous.

I only managed to spoon out a couple tablespoons of the white cream from the can. It whipped up ok, but not at all fluffy like she shows. How did she get so much? It melts very easily. I'll possibly attempt again, but I don't know how she makes so much with 1 can. I chilled overnight, and did not shake or move it.
I will try more from her blog, though.

I used navy beans, and the tomato paste. Just a matter of throwing the ingredients together, then wrapping them up. I steamed for like 45, and they were perfect. I sliced and sautéed them, and we both loved it. Next time, I will make sure to mix before adding the VWG, and add a bit more salt and pepper flakes.

Vegan Appetite Fettuccine alfredo http://www.veganappetite.com/2011/12/brocalfredo-remake-from-american-vegan.html (broccalfredo) this is a modified/updated version from American Vegan Kitchen. I love both! This one is a bit simpler, just because it has few ingredients, and no roasted garlic. I used slivered almonds instead of pine nuts, and added another tablespoon nooch. I also increased the chili powder. Love this sauce, but next time (like others) I will decrease the ACV some. I do like it as is, but just a tiny bit too tangy. Very quick to throw together, thickens nicely, delicious.

Chocolate chip cookies http://ohsheglows.com/2011/09/08/vegan-chocolate-chip-cookies/ These turned out a bit strange for me. However, I did a couple things differently, so that's probably to blame. I heard that you can sub. up to 1/4 cup coconut flour for regular in any recipe, so I did that. I otherwise followed the recipe with the EB and 1 tbs olive oil, and using the hand mixer. After mixing everything, my dough was still crumbly, so I had to add a splash almond milk. I pretty much always have this happen when just using EB in a cookie recipe with no other liquid. Hers are big and flat, and mine barely spread at all. I baked for like 15+ minutes, but they still are not quite done enough inside. The texture is a bit cakey, which is maybe due to the coconut flour. Not really successful for me, but hers look beautiful.

P is not a fan of cucumber, and wasn't very excited about the thought of these sandwiches, but also enjoyed them. Super simple to make (like 10 minutes) and very fun. I don't like wasting the crusts, but would do it occasionally for whimsy! I, sadly, could not find fresh dill, so I had to go with dried. I would do these again with some other tea sandwiches and foods.

PPK Simple Italian sausages You guys inspired me to make these. They are, indeed, very good and very easy. They even came out the right shape! AC is right that it would be better to mix the spices into the liquid before you add the VWG. Also, if you're like me and it always takes you longer to do things than the recipe says, don't bother getting your steamer boiling ahead of time. It's a good way to burn up a pot. ::)

My bananas were quite ripe, so maybe the banana flavor was just stronger. Just a tiny bit more effort needed than regular banana bread, but worth it. Mine didn't seem to rise that much; don't know why. I didn't do any mods. Very good.
