Question about making Seitan...

Dumb question..... :help!: I want to make my own Seitan... is vital wheat gluten the same as wheat gluten flour and is this the same product you can pick up at the market??

vital wheat gluten is 100% gluten. Gluten flour can be 80% or different amounts. You can make seitan from just plain wheat flour but there is a lot of kneading and rinsing involved. Most find it easiest to just use vital wheat gluten.

Found some vital wheat gluten at the local health food store and made a batch of Seitan. Tried some Sweet and Sour... worked great. Took another piece and sliced it in strips and put a little liquid smoke on it before putting it on my indoor grill. Put some BBQ Sauce on them... reminded me a lot of a McRib.
