Replacing cheese in Nachos & Butternut Queso recipe

How yummy does this recipe look?

Obvious problem: Trying to replace the cheese.

Does anyone have a recommendation how to alter this? Can it be skipped?

If there's a specific brand of cheese that doesn't have animal rennet, I'd be all over it. (I gave up cheese about a year ago, but am still not feeling soy cheese.)

Hmm.  I'm thinking you might not need to replace the cheese.  It looks it's supposed to be some sort of creamy dip/topping for nachos with pureed squash?  Maybe go for a little larger squash, and go a little generous on the olive oil.  If you don't feel like getting Daiya or another vegan cheese, you could try some nutritional yeast.  But I feel like the "queso" already has a lot of flavors going on with the spices and chipotle, so you might not miss the cheese.
