Seitan & Amino Acids Question

Hi,

New here.

I've got a tricky question about seitan/gluten. Checking wikipedia, I see that gluten is mostly the amino acids gliadin and glutenin - both of which are non-essential amino acids. If that's the case, it seems to me, with my limited knowledge of amino acids, that seitan has no essential amino acids.

I'm not sure if anyone will be able to help me, but any knowledge about the protein content of seitan would be much appreciated.

PS - I ask b/c I made a FANTASTIC pasta sauce w/ seitan, and am now wondering about the usefulness of eating this... beyond its deliciousness.

Thanks. That's what I've read too, but I was confused by the wikipedia entry.

As for the recipe, I've submitted it and now we play the waiting game.

Hi VegDave, remember that just about anyone can post to Wikipedia or edit an entry...they don't have to be an expert, or even know what they're talking about! LOL On their website Wikipedia makes no claim to expert knowledge...and some of their entries can be pretty confusing. A lot are good, tho.
