Seitan Corned Beef

Well I made the seitan corn beef I saw on EveryDayDish.tv. Hmmmmm, well it smells great and the flavor is good. It looks like a giant mutated brain though. Aparentlly I need to work on my seitan molding skills. I did add a handful of Old Bay seasoning to the water when I simmered it. I remembered my mother always adding it to corned beef when she simmered hers. Very spicey and I am not sure I care for the gritty feeling caused by all the coursely fennel and caraway seeds. It will make good sandwiches though. Maybe corned beef hash?
I've been scarred...when it comes to making seitan, but that Every Day Dish recipe looks sooo yummy!!! My seitan looked like a brain as well...hehe!
Guess you could try running your old bay seasoning in a spice grinder before adding to the water next time so it's not gritty....

I think the gritty feeling is from the caraway and fennel he said to coursely grind. Next time I finely grind.
Things to try; wrap your seitan in cheesecloth and tie string around the ends and various sections down the 'loaf'. To the water wrap the seasoning in a bit of cheesecloth as well or in a reusable tea bag or metal tea ball. If its the spices IN the loaf itself, grind them finely into powder.
