A customer, and friend came through my line at my local health food store (where I work). And she told me a friend of hers made a vegan mac and cheese and was able to get the ooey gooey feel by using tapioca flour. I have searched the site here and can find none. Can anyone point me in the right direction, even if the recipe is not from here. Thanks for any and all suggestions.
I'm surprised, I think tapioca flour has a sweetish taste. I'd probably use cornstarch or arrowroot or flour for mac and cheese.
