Vegan Tasting Lunch

Hey all! I am going home to visit the fam this weekend, and I am going to make a vegan lunch for my mom for the first time, so I want to give her lots of little delicious tastes. I am thinking of doing a salad with baby arugula, fennel, navel orange slices, and toasted pecans as well as a little tasting plate. I envision three different textures and tastes, and I think I will do one lentil salad, with shredded carrots and raisins, and one delicata squash puree. Perhaps the third will be a grain-based dish.
First, how does this sound to everyone?? I am totally new to planning vegan meals...
Second, any ideas on what the third tasting should be?

Salad combining arugula, fennel, and oranges is one of my favorites-- the combo is SO delicious (also nice with beets, but they will color everything they touch!) I like the sound of the dishes together: the combo sounds a-little-earthy-yet-dainty (perfect for a tasting menu!)
For a grain dish... You absolutely cannot go wrong with the barley and wild rice pilaf with pine nuts and pomegranates:

Also, tabouli made with quinoa in place of the cracked wheat is a definite winner, if you're looking to introduce your mom to an "exotic" grain.
