Vegan Wedding Cake

I have made this cake twice:

It is delicious. My husband said he would be happy if I never made any other cake than this.

The recipe makes 2 9" rounds. For the frosting, I used the proportions from here:

and just added 1/2 teaspoon lemon extract.

I think it's Nancy who has a fancy Christmas party every year -- this is the kind of thing you would want to serve. The cake is light and airy, and the filling is so good -- like lemon meringue pie.
