What are you planning on making?
For the week, the next few days, etc. Or, what do you think you might make.
I don't usually plan ahead (except with cookbook challenge), but I like when I think of lots of good things at the store/after I get home.
For the next few days we'll probably have:
Veggie and chicken style spring rolls, roasted asparagus (tonight)
Portobello burgers with crinkle fries, salad
Either the spicy peanut eggplant soup with green beans from VCON or Chinese style eggplant with Szechuan green beans
Maybe the Viet. seitan baguette from VCON
Erin's mustard brussels with some type of risotto (haven't made it in a long time!)
Soyrizo pizza with cheeze
We also have leftover cashew ricotta pasta bake, and garlic and greens veggie soup
I don't really plan ahead...it's usually more like what's the easiest because I'm tired when I get home from work. I cook more on the weekends but then it's what do I have to use up before it goes bad. I wish I planned out meals though.
I'm glad my brussels sprouts are getting some hype ;)
Last night I made Coconut Curry Noodles.
Tonight Andy has requested Mac N Cheese.

Weekends are usually a free-for-all....Saturday we are going to a friends house and she is making Sweet Potato Soup, beer bread and I'm bringing my brussels sprouts and Eggplant Chips.

I know i have some asparagus that needs used, so probably broiled asparagus with seitan and herbed potatoes
also I want to veganize the portabello ravioli in sun dried tomato sauce that they have at Olive Garden.
Ravioli & "meat"balls
Chickpea Cutlets, mashed potatoes and sauted kale
Lemon Zinger cookies
Vanilla Cupcakes w/ mini chocolate chips
Rice Crispy Treats (i almost forgot Angel's request for these! Had to edit to add.)

I have 3 boxes to ship full of baked goods and crafty items, one to my VW HG Exchangee, one to Angel and one to an EQ2 friend. Though honestly, I may just eat all the Quackers as they come out of the oven. mmmm quackers nom nom nom
I wanna try transforming the 5 Min Chocolate Cake by subbing gingerbread-type spices for the cocoa, and see what I get. I don't have any molasses, though.
Tonight for dinner I think it will be a spin-off on fried rice, with celery, carrots, peas, corn, onion, rice (of course), and a peanut sauce that I think will make everything divine.
Tomorrow my bf is coming over and he requested soup, so I'm gonna make something like chili in my crock pot - potatoes, a tomato, spaghetti sauce, onion, corn, black and pinto beans, and perhaps a chopped up boca burger if I can fit it in.
Other than that, the only meals I know about for the weekend is (hopefully) pad thai on Saturday for my birthday, and pizza on Sunday (my bf knows of a place in Minneapolis that makes vegan pizza, so I'm excited).
Probably making pizza bases and having a free-for-all of toppings for dinner tonight, the husband has put in a request for a laksa sometime this weekend, and I also want to make a lasagne as I have some tofu I want to 'ricotta-ise'
Baking-wise, probably cinnamon rolls, some oat cookies, maybe a spice cake, maybe some peanut butter cookies too.
And a few containers full of stir-fry sauces over the weekend for putting in the freezer for next week.
For sure gluten ribs because DS has requested them. Probably a Greek spinach pie (my own recipe, though), as well. I'm planning to go through my recipes tomorrow and try to find a few things to make over the weekend.
I'm away for a couple of days so food will be whatever my friend and I eat, whenever we eat it. But I chopped up tons of baby veg last night to go in the freezer and I'm thinking about a big veggie-ful dinner with a bean burger when I get home :)
Well, everything last week went to plan.
This week I think it's going be pasta salad today (for my lunches the next few days), veggie soup on Friday, fried rice on Saturday, and I really want to try making some beans in my crock pot on Sunday, since I am almost out.
I'm making the Scrumptious Corn Chowder from this site tonight.
Sometime I want to make a Thai peanut sauce stir-fry, sweet potato biscuits, and taco salad, but who knows if I'll actually get around to it. Lately soup, salads, and sandwiches have been my normal foods.
The kids' saxophone teacher told me how her Moroccan DH makes this potato-onion dish to be eaten with flat bread. Hers had chicken in it, but I'm going to make it with chickpeas instead. It has olive oil, cilantro, parsley, garlic, onions, salt and pepper, paprika, ginger, turmeric and potatoes. We'll see what I come up with.
I plan on making a recipe I saw on here, but can't remember the name. I just know it had cabbage and mushrooms two of my favorite foods. I'm going to use sourkraut because that is what I have, and it's really about time I do something with sourkraut other than eat it straight out of the package.
This Sunday I'm making my own brownie recipe which I created for a different site around 2 years ago, chocolate brownies with dark chocolate chips. I'm suppose to be staying away from chocolate and caffeine, which this recipe has both but i'm making them for my son's school snack for the upcoming week. yeah really - i'm going to rename them Peccadillo Brownies >:D

My meals for the week:
Perhaps fried rice again, to use up some veggies before they go bad
I have avocados in the fridge, so guac at some point
And the rest will be pb&j, maybe some rice and beans since my beans cooked perfectly yesterday :-)
The rest of this week's a write-off but I'll come back at the end of the week with what we've got planned for next week : )
