What's for dinner?

I don't remember all that I eat every day, but dinner is the main cooking meal for me.

Last night we had green chile bean burritos with potatoes, peas, and cilantro and baked jalapeno poppers.

Tonight I plan on having Asian slaw, rice with green onions and sliced almonds, and cinnamon sugar bread.

tonight I'm planning on something from Best Veggie Burgers..maybe the Korean BBQ

is that joni's new book or something else?

omfg erin that pizza sounds bomb... and dipped in ranch  :)>>> speakin like a champ :)

just answered my own question about the cookbook reading another thread lol

I was never a meat-on-pizza kinda guy. I always rocked cheese pizza, pesto, or veggie pizza. *shrug*

I never put fake meats on pizza. Well, I don't use much fake meat at all.

Last night I ate out with my Dad and husband.  My Dad is visiting from out of state.  I so rarely eat out that it was a nice treat but a challenge to find a restaurant where my meat and potatoes husband and digestive sensitive Dad and my vegan self could all eat.  I chose the Duluth Grill, a local organic restaurant (they have a garden at the restaurant and herb pots and use many of their own vegetables and mostly local foods).  They have one totally vegan dish and a few vegetarian ones that can be made vegan.  So I had the Portabella Mushroom Tempeh stacker on Ciabetta bread with sprouts and vegan cheese.  That was the first time ever I had vegan cheese other than the traditional nutritional yeast sauce.  It wasnt too bad, but that sandwich was HUGE!  I could only eat half.  It was a little bland too compared to my cooking :) but not too bad.  I had steamed broccoli on the side (I can never spell that word) and lemonade.  All and all it was a nice time out.

Tonight I am going to make a vegan meal for my Dad...mushroom risotto and mashed sweet potato with coconut milk.  I think he will be able to stomach that.  :)

We don't usually either - I usually use mushrooms, peppers and onions - and that's all.  But for some reason I was craving something sausagy - I thought about making my tempeh sausage, but I was too lazy.  I don't like Daiya enough to make just a cheese pizza and I'm not a fan of pesto.  A lot of times I'll just make a tomato, basil and garlic pizza.

I'm thinking sketti tonight with mushrooms.

Well, it's really Andy who doesn't like pesto.  I guess I'm impartial, but I don't ever make it because he won't eat it.  I think he's still traumatized from the avocado pesto pasta I made that one time.  It was so bad.

All of this pizza talk is making me want it again.  But I should refrain.

Last night we had Garlic and Greens soup with bread and salad.
I'm not sure what I want for tonight...

Ok, the decision has been made - breakfast pizza!

My mind has been completely boggled as how to make a breakfast pizza like I envisioned it should be - and then a lightbulb went off when I saw that someone had reviewed the frittata recipe - duh!  Make it like a frittata/quiche on pizza dough!  I'm so excited!

I think about food way too much.

Tonight is homemade ravioli with tomato sauce. And maybe some garlic bread. Made some Chocolate Peanut Butter Pillows too, if that counts as a dessert.

I'm not sure whether I want VOTC wheatballs and Vcon non-vodka sauce and spaghetti OR mushroom & marmite sausages with sweet potato and regular potato mash w/broccoli.

VEGWEB WHAT DO I WANT?

I may be kind and leave the sausage and mash for N's cooking night as he knows how to do that.

Considering you posted that at nearly 4am where I am, I don't know if you've already eaten but I choose Sausages, sweet mash & brocc.

Last night we had fire roasted corn and potato chowder with caprese flatbead on the side.  Peaches & cream muffins for dessert.

I have black eyed peas cooking right now and greens in the fridge, so I'm thinking something Creole for tonight.

my boyfriend is at trivia with work friends tonight so I'm on my own for dinner--and I'm planning a lovely late dinner that I'm quite excited about. I'm making Dragonfly's Uncheeze Sauce (posted on vegweb) with tofu that I'll pan fry in spices and sauteed tomato, spinach and eggplant.

tomorrow i'm making  a nice hearty dish: kamut penne with white beans, kale, eggplant and tomato in pesto! Hooray for dinner  :)

Creole black-eyed peas, swiss chard with smoked mushrooms, and some (unhealthy and delicious) white rice are in progress.
