What's your favorite thing to make with coconut milk? (toddler-friendly)

Aside from using it for a smoothie, what would be your favorite toddler-friendly use for coconut milk? My LO's not too keen on icy cold drinks, and I have a can of coconut milk that I want to use up (and to give him the extra healthy fat). Ideas or suggestions? (will post on family/child board, too)
I hear that coconut milk makes really good yogurt. I'm going to try this myself for my grandaughter
I made cupcakes with it today. Last night, I made brown rice with it (replace the water with coconut milk, you may need to add a little water to the milk, because it evaporated really quickly, and the rice was a little undercooked) 3 nights ago, I made 'ice cream' with it. Yah, I kind of like coconut milk..
Silk makes a coconut milk now, which I almost prefer over their almond milk.
Coconut rice pudding
I put some coconut milk from Thailand in banana bread once, to use it up, but the bread came out heavy and kinda dry. I don't know if the Silk brand would do the same thing; if you use it for baking you made need more than the recipe says.
yes..coconut rice pudding is really good. I measure the milk and add some water to make 3 cups and add 1/3 cup of rice..sweeten to taste with preferred sweetener and a bit of vanilla. bake at 300 til thick and creamy.

Does said toddler like curry? A simple coconut curry stirfry or chana masala with coconut milk goes over well with my kids.
