Zen Bakery - Fibercakes (bought at Trader Joe's)

I used to buy these Zen Bakery fibercakes at Trader Joe's in Los Angeles. I'm not sure if all TJ's carry them... or just in LA since the bakery is in LA... anyway the fibercakes (not the muffins, though those are good too) have 13g of fiber in them!! YES!!

If I could I would buy them everyday! But being in Germany I can't... so I'm gonna try to make them.

Anyone have any suggestions on ingredient quanitities??? Or ever made a different fibercake like muffin?

I'm actually surprised there is no flax in them, I actually had a dream about making these last night and in my dream I used flax.

I have had the muffins and they are fantastic!  FYI - I know that TJs in San Francisco and the Washington, DC Metro carry the products.  My completely untested suggestion would be to start with a highly rated bran muffin, such as this one: http://vegweb.com/index.php?topic=5687.0 and modify as necessary for a more cake-like texture.  If you haven't cooked with oat bran before, you should know that it sucks up liquid like a sponge (I add oat bran and flax seeds to every single thing I bake  :)), so if things start looking a little grainy, mix in some additional water or unsweetened apple juice.

I used to buy Zen Bakery's blueberry bran muffins (they sell them in Sacramento TJ's too), which had a ton of fiber as well, and here is a close recipe. 

1-1/2 c. wheat bran
1 c. soy milk
1/2 c. applesauce
1 egg sub. (sometimes I omit this)
2/3 c. brown sugar (I use Splenda)
1/2 t. vanilla
1 c. flour (I think I use w.w.)
1 t. baking soda
1 t. baking powder
1/2 t. salt
1 c. blueberries (or whatever you have on hand)

Directions:
Mix bran and soy milk.  Let stand 10 min.  Add the egg sub.  Mix all the dry ingredients (except berries) together.  Add to the wet mixture.  Fold the blueberries in.  Put in greased muffin cups and bake 15-20 minutes at 375 degrees.
