Transitioning from Paleo to Vegan

Hi everyone!

Over the course of several years I have been on various diets due to a chronic illness that had to do with my digestive system. Everything from vegetarian, vegan, gluten-free, raw vegan, and paleo. I am currently following the Paleo diet and it has helped me with some issues (I was just diagnosed with a super rare intestinal disease) but not all of them. Over Christmas I will be starting a round of aggressive treatment for my disease.

However, I have been eating Paleo because I started to develop food intolerances to everything-- beans, dairy, soy, grains (even rice), gluten, etc. And I started to become unable to digest raw fruits or veggies. But I have been miserable on this diet and I'd like to go back to being vegan. But I'm not sure how to transition. My GI doctor was telling me that I may or may not be able to have the above listed foods ever again if my disease has done permanent damage.

Does anyone have any advice? No one I've talked to in the medical field knows what I could/should be doing in terms of diet and told me the only thing I could do was experiment. Anyone have any knowledge about food re-introduction, etc?
