just starting the vegan life
Day 2 of my vegan lifestyle. Honestly I already feel better. Totally new still researching recipes and alternative options.
I am slowly trying to convert back to vegetarian/vegan lifestyle, starting by adding more fruit and vegetables to my diet than anything else.I found this recipe and tried it and our whole family loved it and it is from a book, don''t remember off hand but it's a beet and cheese napoleon salad, pretty easy. trim beets, roast them whole in a pan at 375 with water,cover tightly and cook for 45-55 min. let cool.
take 8 oz. vegan cheese and mix in 1/2 tbs. garlic powder.
peels the beets when cool to touch and slice thinly. stack the beet slices and cheese alternately over a bed of lettuce with avocado,cucumber, candied pecans and balsamic vinaigrette.
