Can you please share with me what you eat on a regular basis including portion sizes and how many times a day?

I usually start off my day with fruit till noon or a green smoothie of fruit and leafy greens in the blender with some water.

Then I try to have a whole grain like a bread or a cooked grain and a salad. Evenings I try to have an easy to digest legume like lentils or a quinoa and salad.

I never measure amounts I just eat till I am not hungry anymore.

IsisDC - you sound like a true 'skinny vegan'...have you heard of the 'skinny b_tch'?
Can you tell me your recipe for the green smoothie? I tried one with kale and strawberry and banana and the ratio was off.
And any recipes on the lentils?

My mantra has always been "variety...variety...and more variety"......

Eating a wide variety and color of fruits, vegetables, nuts, seeds, legumes (to include lentils), whole grains, and soy products (not processed meat analogs, but tofu, miso and tempeh), as well as a small amount of helathy fats to include flax and hemp oils...will keep you healthy in the long run as a vegan.

Try not to obsess over getting exactly the right amount of nutritents each and every day, but eat good whole foods dadily and over time you'll get what you need. 

Also get 15 minutes of sunshine a day.  Laugh, play and find your joy.

Agreed.  But also staying away from anything over-processed.  Cooking is NOT my favorite thing.  And I really don't have time to do a whole lot of it (I suspect I'm not the only one...) Cooking to me is boiling quinoa and adding sugar, cinnamon, and almond milk.  LOL. Veggie patties are an indulgence since they're sooooo processed.  If it has more than like... 5 ingredients I don't eat it.

Usually I eat a variety of diet that includes mostly legumes like peas and then grains with oats. Vegetables like tomato, lettuce also consist the rest of it. For proteins you can consider dry TVP flakes. If you are worried about not getting the balanced nutritional requirement, maybe you can consider vitamin supplements as well just like what I'm doing now.

It is very easy to figure this out when you garden.  I live where I can grow all or most of my fruits and veggies 4 seasons.  So I go to the garden and pick whatever is ready.  Then figure what to do with it, and a meal comes out!  I preserve the excess, so I always have a full freezer and pantry. 

Right now I have lettuces, arugula, peas, kale, radishes and still a few cherry tomatoes.  Lots of citrus too! The menu for today looks like a big salad with steamed snow peas and tomatoes, and a pot of kale-potato soup with white beans.  Finish the meal with a nice navel orange picked from the tree.  I suppose bread could be added too.

I start most days with a smoothie made with fruit and hemp protein (sometimes I add soy or almond milk, but usually make them with water). Sundays I make pancakes with fruit and a blend of whatever whole grains strike my fancy (oat flour, buckwheat, spelt, ww pastry flour, flaxmeal). These are always accompanied by hot lemon water or tea (rooibos or green).

Lunch is usually homemade soup, curry or vegan sushi (yam or avocado), sometimes a hearty salad. And more tea.

Supper is usually a stirfry of frozen veggies, sesame seeds, garlic, ginger, chiles, thai seasoning and a splash of Braggs, maybe some tofu. And rooibos or chamomile tea.

I snack on hummus & rice crackers; tortilla chips and salsa; ww multigrain toast w/ natural nut butter and flax seeds; fresh fruit or veggies; or cereal.

I keep Luna, Optimum or Raw Revolution bars on hand at work for the times my blood sugar is low and I need a quick, yet sustained, fix.

On the weekend I'll have a couple beer and a local organic baker's delicious, sugar-spiking vegan pumpkin cookies  :)>>>  (they're like pumpkin muffin tops with spicy icing).

I'm a busy full time student, so my meals during the week are pretty rushed (unfortunately). my breakfast is usually oatmeal, some type of cold cereal with almond milk or a cliff bar. I try to always include some type of fruit in my breakfast, especially blueberries. I take wraps with me during the day, and i usually fill my wraps with tofu scramble, beans and veggies, or gardein meats and veggies. i try to snack on vegetables and/or nuts and dried fruits throughout the day. I like light dinners so I prefer soup or salad. I'm trying to slim down so my meals are not too extravagant. On the weekends i love trying new recipes, especially with tofu.

Fruit and vegetable smoothie for breakfast, or oatmeal with peanut butter and soy milk, or both.

Usually for lunch I have whatever leftovers are in the fridge.

Lots of fruit, lots of veggies, some bread and pasta here, some soy milk and oats there...
My weakness is when I'm out and about and hungry and I tend to eat a clif protein bar and drink half a carton of soy milk..
