Road's End Organic Chreeze..Delicious vegan cheese, would it work w/ breakfast?

This is the best and easiest mac and cheese I have tried. I use the Shellz cheddar version, and it;s amazing. It's soy free, completely vegan and completely organic.

Turns out you can buy their various cheeses in bulk. Does anyone eat this stuff? The cheddar seems like it would be perfect with everything, but what if I make it with a vegan breakfast omelet? Is the cheddar too lunchy or dinnery? thanks peeps!

When I first went vegan I used to buy Road's End box mixes.  But after a few years I started experimenting with my own Nutritional Yeast sauces.  I find I like the homemade versions myself but for breakfast? DEFINITELY!!!!  Over tofu scramble.  Atop a Tofu McVegan.  As a wonderful addition to tofu and bean scramble.  Do it!

Sure thing Az!  Unfortunately I rarely measure.

I make a roux with Earth Balance and flour in equal portions.  Roughly 1/4 to 1/3 cups each depending on how much sauce I want.
Melt the EB in a pot on medium heat. Sprinkle the flour on, mix.  Too liquid add more flour.  If all the flour doesnt get absorbed add a touch more EB.

Once its all thick and playdough like (30sec?) add in 1/4c water and stir it well.  I usually use a whisk or use a silcone spatula to make sure its lump free.  Let it come back to a low simmer and bubble about 30 more seconds.
Repeat this step until 1full cup of water has been added.

Next add nondairy milk in the same basic steps listed above to 1-2 cups (depending on creaminess and quantity you want). 
Add in spices; veg bullion, thyme, pepper, smoked paprika, garlic powder, lemon, mustard... whatever suits your taste buds!

Add in 1/2 to 1cup Nutritional Yeast flakes.  Stir well and allow to simmer for a minute or two.  Taste.  Adjust seasoning, consistency or add goodies to it.  Eat!

Just realize I cook by feel and almost never ever ever measure.  So give it a try and see how you like it.  Sorry!
