Being vegan is great for the Earth. You know what else is great for the Earth? Shopping in ways that align your personal values with products that reduce harm and create jobs. This week, I'm giving away a unique eco friendly bag made by women in New Dehli who collect a fair wage to transform discarded plastic litter into the cutest toes around. Who knew reclying could be so fashion forward? The creativity of these women is inspiring. I mean, I can't even sew a button on a shirt and these people make on-trend bags with garbage? I hang my head in shame. In addition to being absolutely adorable and socially responsible, the bags are produced and purchased under Fair Trade conditions. Love.

oooh that's pretty! i love slicing zucchini, sauteeing it in a bit of olive oil, and adding some salt and pepper. zucchini bread ain't half bad, either. especially with chocolate chips.

I love zucchini. Do I have to pick ONE favorite? Um... roughly chopped, topped with Earth Balance, garlic, salt, and basil. Sealed up in tin foil and grilled. Mmm.

That's awesome!! My favorite zucchini recipe (just made it last week): zucchini chocolate chip muffins! (measurements are approximate, don't have the recipe in front of me...)

1 C AP flour  (unbleached)
1/2 C WW flour
1/2 C raw sugar
1/3 C canola oil
1/4 C soy yogurt
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp salt
dash of allspice
3/4 - 1 C vegan chocolate chips
1 zucchini, grated

Combine dry ingredients; whisk wet (except zucchini) together. Add wet to dry -- mix until just combined. Fold in zucchini and chocolate chips. Bake at 350 degrees for 20-25 minutes.

Like I said, measurements are approximate...contact me if you want the exact measurements, it's a DELICIOUS recipe :D

My favorite way to eat it this year was simply sliced and steamed. There is a certain sweetness to them this way, with nothing to compete with the subtle zucchini flavor. But I won't turn down zucchini bread or muffins either. My grandmother cuts them into coins and mixes them with a marinara sauce and that is delicious too.

Zucchini bread. Hands down. So versatile--make it savory and serve it with summer chili or make it sweet for dessert! Yum!!!

omg, you guys are making me hungry. My favorite way to use zucchini is raw. I use a peeler to make it into fettucini  noodle like strands. Put  some sea salt on them to wilt them a little. Then I make a raw marinara with tomatoes, red peppers, garlic, basil, thyme, rosemary,olive oil etc (blend it in a blender till smooth).  It's soo good and the zucchini actually has the consistency of noodles.

I eat a lot of zucchini "pasta," but probably my favorite is zucchini hummus - miraculously it's raw, relatively low fat, *and* creamy. Food that's actually healthy and easily digested doesn't get more delicious.
