Caprese salad all the way! Sliced tomato, some sliced extra firm silken tofu (to replace the mozz. cheese), balsamic vinegar, olive oil, s&p. Yums. :)>>> ps: fresh basil too!

I'm with lubi, sun warmed, salt and pepper, and I'm happy! Instead of an apple or orange in my lunch bag, my mom would often pack a roma tomato...we called them 'funny tomatoes'

Since I was a wee girl, I always loved everything tomato - tomato juice, tomato soup, tomato sauce, etc - everything EXCEPT for raw tomatoes themselves. That is, until I went to Spain last spring and discovered....
PAN CON TOMATE!!! Which for those of you who don't know Spanish, translates as "bread with tomato". In Spain, this is a very popular appetizer or breakfast, which basically consists of diced tomato mixed with some minced garlic and olive oil and then put on bread/toast (for those of you who didn't know).
This snack completely opened my heart to raw tomatoes; I love them like I never have before and now I eat them all the time.

Being from Australia, the best way I love tomatoes is between two slices of bread ( wholewheat of course ) and soy cheese, YUMMO!
Tomato sandwich...crusty bread, veg mayo, sliced tomato, more mayo, another slice of bread...requires a bowl to drip into & a spoon for the 'soup'.

I love tomatoes, even if they were less than congenial in Attack of the Killer Tomatoes. My favorite use for those voluptuous, scarlet beauties is in sauces and stews. Yum!
I like pita bread filled with slices of fresh tomato along with cucumber, mushrooms, sprouts and either some Vegennaise or hummus spread on the bread. I also love marinara sauce with chunky pieces of tomato over spaghetti or other pasta.
My favorite way to eat a tomato is sliced on a bagel schmeared with avocado (and a little salt).
Laura, this giveaway depresses the hell out of me. My tomatoes (along with those of just about everyone in the North East) have blight. I had 16 plants, some have been torn out, the rest are dying. I've gotten 2 cherry tomatoes this year, and one heirloom I picked green and ripened on the windowsill before it got blighted.
If they weren't dying I'd be eating them drizzled with really good imported olive oil, with fresh garden basil, and sprinkled with sea salt.
My new favourite way to have tomatoes is on a portabello burger... mmmmmmmm. I love how messy it gets, with the portabello juices, tomato juices, vegennaise, etc.
My favorite way to eat tomatoes is... really good quality toasted bread, topped with lots of sliced, raw or broiled tomatoes and drizzled with fresh-dill vinaigrette. Excellent summer lunch!

Believe it or not, I've only been eating raw tomatoes for about a year or so now.
So I'm definitely needing to learn fun ways to cook tomatoes.
I love tomatoes pretty much every way. Tomato soup, plain tomato slices, tomato and avocado sandwiches are awesome too, but I'm usually lazy, so I usually eat them on toasted wheat bread with mustard. Yum.
When I have an abundance of tomatoes, I dehydrate them, put them in small servings in snack bags and then eat them as a snack just as they are. They're my candy!
Mmmmmmmmmmm on toast with marmite, avocado and pepper... it's the BEST!
Favourite tomatoes: Black Russians -- grilled on skewers with chunks of onion, bell pepper, tofu, zucchini and eggplant, basted with an oil, vinegar, tomato paste, soy sauce and oregano marinade. My Hibachi is out of order, and I'm missing these so badly right now!
And while he doesn't care for them grilled, my son will eat cherry tomatoes off the vine until he explodes.
Yummmmmmmm...I love my tomatoes baked with basil and a balsamic reduction...SO GOOD! So good, actually, that I'm going downstairs to make it right now because this got me all pumped up for tomatoes. =)
