My favorite speedy meal is:
1/2 cup cooked brown rice
1/2 cup cooked lentils
1/2 bag frozen veggies
2 tbls nutritional yeast
shredded romaine lettce

mix the first 3 together-heat until hot-top with  nutritional yeast flakes and shredded lettuce-yummy
This is super fast if you have lentils and rice all cooked up ahead of time

left over brown rice, black beans, corn and salsa sprinkled with nooch, yum.  and even if there is no left over brown rice it is still delish.

What we like is to make some cornbread, heat up a can (or two) of manderin orange slices and cook up some non-sausage type product then put the cornbread in a bowl, chop up the non-sausage and add to bowl then cover all with the manderin slices and juice - voila!

Tostadas - top a crispy or soft corn tortilla with beans, shredded lettuce, avocado and salsa

avocado and tomato grilled sammiches with sprouts. yum yum yum :)

Spread a tortilla with peanut butter, top with banana slices and a few raisins, roll up and enjoy.

My favorite quick and easy meal is chana masala with rice. Yummmm!

Peanut butter/banana sandwich on toasted multigrain bread!!

Count me on the burrito love train!

Beans (black or pinto) and tvp in a nooch or tomato sauce wrapped in a whole wheat tortilla. Even better with veggies in it (roasted chiles or onions, perhaps)

Alternately--skip the tortilla, put on top of some lettuce, add some chopped avocado on top. Works best when beans and tvp are in a tomato sauce (so it's like a chili)

Vegan pilsbury crescent rolls + Vegan hot dogs = a quick and easy meal!

*add some sweet potatoe fries and a salad and you got a little peice of heaven right there :)>>>

my favorite speedy and delicious meal would have to be green peppers stuffed with kidney beans and rice, with some tofutti sour cream on top.

those bags are awesome, i've never seen those here in new york. i seriously want one so bad now, haha.

Either pita bread with lettuce, tomato, avocado and Vegenaise; or a veg burger patty grilled along with grilled, onions, peppers and mushrooms; or a spinach and mushroom quesadilla made with vegan cheese, and Tofutti sour cream on the side.

I just got some BBQ seitan at Sticky Fingers in DC on Saturday, and it was DELICIOUS.  I hadn't tried seitan before, but it was fantastic!  It's my new favorite quick-and-easy (since all I had to do was pay for it...)

My easy weeknight meal is roasted cauliflower w/ garlic and steamed kale on top of red and white mixed quinoa.

Whenever you say "on top of" it always sounds fancier!

Definitely short on flair, but a fav quick meal is pasta with red sauce, and a side of whatever veg is handy.  If you can boil water, with this dish even you can be a chef.

Fuls medames-- can of fava beans, tons o cumin, chopped tomato and onion, jalapeno. Heat. Consume.

Also a tortilla slightly charred over open flame, then topped with whatever is in the fridge! Salsa, baba, hummus, whatever.
