My favorite corn recipe is good ol' cornbread. Nothing beats hot, fresh out of the oven corn bread with a little earth balance and honey. Mmmmm.!
In the summer I love corn and avocado salad and in the winter, corn chowder. I could eat it every day!!!

I like raw plain corn on the cob. If I don't eat it raw then it is either steamed or grilled. I mix it with avocado and tomatoes and throw it in a salad. :)

I like adding corn to fried rice. Oh, and one my favorite things to bake is corn bread.

Oh there is simply nothing better than Pico de Gallo, roasted fresh corn and avocado with some tortilla chips! Makes me want some right now (except it's 10:01 p.m. and well, that's probably not the bestest choice before bed!) But tomorrow will be here before we know i! :-) :)>>>

unfortunately, i can no longer handle corn. it's too hard on my tummy.... but boy do i ever miss it!
