Corn and Black bean enchiladas! Served of course, with fresh grilled corn on the cob!
Not really a recipe, I like to eat it right off the cob with a little bit of earth balance. Second favourite would have to be the Southwestern Corn Pudding from Vegonomicon.
Black beans and corn salad.
fresh corn kernels
diced red onion
diced green and red bell pepper
balsamic vinegarette dressing
combine and chill-yum!
Corn on the cob roasted with lemon juice, salt, cumin, and garlic powder.
In the summer I like corn on the cob, eaten the day it is picked. In the winter I like cornbread with the soups, stews, and chilis I eat a lot of then.
I like corn on the cob!! It's way delicious. I also had a corn chowder once, and I'd like to repeat that experience again... :)
In a sheet of foil, combine pre boiled new potatoes, chopped onion, ear of corn. Sprinkle with old bay seasoning, seal and bake at 350 for twenty minutes. Add a big ol' slather of vegan marg and devour!
Grilled with veg marg. lime and chili powder!
Boiled on stove top with a tablespoon of sugar added to the water.This is the way my grandma made it. The sugar somehow makes the corn very tender.

I love Grandma's cornbread made vegan from vw! yummers. I also love (and currently miss) good fresh corn on the cob.
My favorite corn dish is just simple corn on the cob with some Earth Balance and salt and pepper.

corn and black bean salad...equal parts rinsed black beans and corn, diced red onion, lime juice, cilantro, balsamic vinegar, olive oil, and salt (all to your taste). serve cold and with corn tortilla chips if you wish (especially the blue corn kind).
I really enjoy corn in veggie soups, shaved from cob to pot!
We love corn on the cob around here - but it's really good anywhere. Ooh, corn bread rocks! I think I will have to make some soon now that I think about it!
