Vegetable Barbecue CouscousIngredients (use vegan versions): 1 package of frozen black beans, corn, broccoli, and red peppers
1/2 bottle of barbecue sauce
couscous
Directions:Make couscous according to package. Put frozen vegetables in saucepan, add water to cover. Cook until tender, probably 7 minutes. Drain vegetables. Put vegetables back in pan, and cover with barbecue sauce. Heat and serve vegetable mixture on top of couscous.
This was pretty good, even my non-veg husband liked it
Serves 4-6.
Preparation time: 15 minutes
i make stuff like this allll the time. its so easy. another thing that's good is to cut up some tempeh and fry that in the barbque sauce too. mmmmmm.
