hernandez-katt@umich.eduCardamom Breakfast RiceIngredients (use vegan versions): 1/2 cup white basmati rice
1 tspn Cardamom
1 tspn Corriander
a little oil
1 cup water
1 tbspn vegan maple syrup
1/2 tspn vanilla
handful of slivered almonds(to taste)
handful of raisins or currants(to taste)
Directions:Put just enough oil in a small saucepan to prevent sticking, then fry the rice with the cardamom and corriander for a couple minutes, until it smells nutty. Add the water, maple syrup, and vanilla, cover, bring to a biol, and then set to simmering. While it simmers, pan-toast the almonds. They are done when they have little golden-brown spots here and there. When the water has boiled off-about 20 minutes later-remove the pot from the heat, throw in the raisins and nuts, cover, and let stand for a few minutes. This is really nice on cold winter mornings. . .

Very tasty! I used almond oil and liked the effect. It is also good with Jasmine rice. This recipe is easy to make ahead of time and re-heat when you are ready to eat it.

Yummy! I didn't have all the right ingredients, so I used brown rice, hazel nuts and agave syrup, and I used some vanilla flavoured soy milk and some cold cinnamon spice tea together with the water. It turned out delicious! My boyfriend insisted on eating sun dried tomatoes (not to salty) with it, and that was not bad at all.

You know when you think you have everything you need and then you're like, 5 items short? Well, I ended up using short grain brown rice, garam masala instead of cardamom, brown rice syrup instead of maple syrup, dried apricots instead of raisins, and a bit of soy milk at the end because my rice was drying out. YUM!! So warm and spicy and sweet and delicious! My tummy says thank you!
